Hi Guys,

After speaking with the folks at Dr. Graber's yesterday, I've decided to branch out in terms of my eating.  By this I mean - I'M ADDING SOUP!  Woo Hoo.  Last night, I tried Progreso's Vegetable Soup and it was awesome! 

I know that soups are "slider" foods, but some of them are pretty hearty and contain some good stuff.  I need to shake up my eating routine a little bit (eggs, yogurt, applesauce, and oatmeal are getting a bit old).  I am allergic to seafood so tuna is out.  

Any tips?  Recipes?  I'm thinking potato soups, veggie soups, other ideas... Please note: I am not able to add any meat to my soups until mid-December.

This has become one of our favorite soups.  I can not take credit for the recipe as I got it off of this board, but I can not remember who it was. I hope you enjoy.

BLACK BEAN SOUP (Makes 12 cups pureed)   3- 19 oz can black beans, drained 1 tbsp oil 3 cloves minced garlic 2 onions, chopped 2 stalks celery, chopped ( I did not use) 2 tsp chili powder 2 tsp chopped fresh or pickled jalepeno peppers 1½ tsp dried oregano 1 tsp ground cumin 6 cups chicken stock (use Veg Stock for vegan) 1 can stewed tomatoes 14 oz can ¾ tsp salt ¼ tsp pepper ½ package Low Fat Hillshire Farms Smoked Sausage diced (can leave out if you are vegan) 4 tsp lime juice Sautee garlic, onions and celery in the oil until transluscent. Add the chicken stock, the spices and the beans. Boil gently for 20 mins. Add the tomatoes and the sausage and gently boil another 10 mins. Add the lime juice just before serving. Puree and serve with a dollop of fat free sour cream. Freezes well after it’s been pureed as well.
