Hi Carole,
I grew up in Kennett Square, otherwise known as the mushroom capital of the world. My father was a mushroom grower. You can freeze Portabella's. You definately want to precook them. Blanch them for about 4 minutes. Let them cool and then stuff them. I've done it many times. They are delicious with crabmeat or lowfat sausage, spinach and a little chopped garlic. Enjoy
