Thanksgiving recipes for us RNYers
Hi! Here is a WONDERFUL sugar free pumpkin dessert that you can enjoy for the holidays. I have made it a couple of times and it's awesome: Enjoy!!
Pumpkin Delight
Ingredients:
Graham Crackers
¼ C melted butter
8 oz. light cream cheese
1 can 100% pumpkin
Pumpkin pie spice
Cinnamon
½ c. Brown Sugar
½ c. skim milk
2 pkgs sugar free vanilla instant pudding (dry)
12 oz. Cool Whip Light or Sugar Free
Place whole graham crackers on bottom of a 13 x 9 pan. Brush melted margarine over the graham crackers.
Mix cream cheese with electric mixer. Add can of pumpkin. Add spices into the mixture. (I put in 1-2 sprinkles of cinnamon and just keep adding pumpkin spice until I get the actual taste of pumpkin pie). Beat together.
Add brown sugar, milk, and both pkgs of pudding mix. Mix until all is well blended. FOLD in Cool Whip. Spread mixture over the graham crackers. Cover w/plastic wrap and refrigerate overnite or at least several hours.
Can add your choice of nuts on top for garnish.
