I am looking for a broccoli crust for pizza
2 cups cooked broccoli shredded (squeeze out as much water as you can)
2 large eggs
2 cups shredded mozzarella
1 cup shredded cheddar
1tsp garlic powder
combine all and press evenly into well greased pizza pan or cookie sheet (this makes a LARGE 14 inch crust)
sprinkle with freshly ground black pepper and basil (if desired)
Bake at 450 degrees until browned and bubbly (15-20 minutes)
this is the recipe that someone posted on the board a couple of months ago. I have tried it and I ran my broccoli thru the food processor and used it raw, it turned out good, the broccoli was tendercrisp which is the way that I prefer. I also substituted the cheeses with what ever I had in the fridge.

I am thinking mushrooms and since I have left over browned ground turkey and onions, I will add it. Wonder if it will freeze well. I hate making such large quantities of stuff and then it gets thrown away... I live alone so it is hard to cook for just one and even though I don't mind leftovers, after 3 days it becomes monotonous
Thanks,
Shelia
I used an alfredo type sauce, with chicken, onions, mushrooms, green peppers. I just couldn't get used to the idea of a tomato sauce with the broccoli. But any toppings that you like you can add. I think when I tried it I used monterey jack and extra sharp white cheddar. And then I sprinkled parmesan cheese on top.
Have a great day.

I make a meat and broccoli crust pizza a lot. I use very lean ground beef and slightly cooked shreded broccoli. I don't use any filler but some people use wheat crackers.
I just use about a pound of beef, with 4-5 stalks of broccoli. Mix in a couple of eggs. I use basil and oregano with garlic salt.
Press the mixture into cookie tray making it round or square. Use very lean meat so it won't shrink and crack. If it does, it won't look great but the taste will be the same. I cook it until the meat is browned well.
Just top it with sauce, any veggies, meat and cheese. Then pop back in the oven to melt the cheese. The crust freezes well when you use less broccoli than meat. You can cut it into serving portions and freeze it topped or not.
