I have looked at alot of recipes on here, some look really simple and sound really good. There are others that consist of so many ingredients and ingredients that I have never heard of before.I was wandering if anyone might know of any simple recipes with simple ingredients?

Here's a "Cheescake":

The Basic "Cheesecake" Filling

1 cup fat free cream cheese
1 cup part skim milk ricotta cheese
1 large box or 2 small boxes Jello sugar free pudding mix--any flavour you wish (one good combo is cheescake flavor and white chocolate)
1 cup 1% milk
2 scoops protein powder that will enhance/match the flavor of the pudding


Mix this altogether well with a hand mixer.

 

6 servings of 1/2 cup each
130 calories
4gm fat
9gm carb
15gm protein

For a family dessert, pour this into a graham cracker crumb crust--just the cheap ones from Walmart are less than $1.  They are only 6 gm sugar/serving.

Also you could add a layer of  Cool Whip to the top and/or some fruit (like bananas with banana pudding).




Chocolate Peanut Butter Parfaits

 

6 (regular) servings

 

2 Tbs. reduced-fat chunky peanut butter

2 Tbs. cold skim milk

2 c. cold skim milk

1 c. plus 6 Tbs. “Cool Whip Lite” topping, divided

1 pkg. (1.4 oz.) sugar-free instant chocolate fudge pudding mix

3 Tbs. finely chopped peanuts

 

In small bowl, combine peanut butter and 2 Tbs. skim milk.

Fold in 1 c. whipped topping and set aside.

 

In another small bowl, whisk remaining milk with pudding mix for 2 minutes.  Let stand for 2 minutes until semi-soft.

 

Spoon half of the pudding into six parfait glasses or dessert dishes.

Layer with reserved peanut butter mixture, then remaining pudding.

Refrigerate for at least 1 hour.

 

Just before serving, garnish with remaining 6 Tbs. whipped topping (one for each parfait) and a 1 ½ tsp chopped peanuts.

 

 

Each parfait:

146 calories; 6 g fat; 2 mg cholesterol; 16 g carbs; 1 g fiber; 5 g sugar; 6 g protein


Hamburger dip

(from my friend Janet)
1 lg. box Velveeta Cheese
1 med. jar. salsa
1 lb. ground beef.

Brown ground beef and drain very well. Blot it with paper towels .
Put Cheese and salsa in crock pot, add beef warm on low. Stir occasionally to  making sure it does not burn.
Serve with whole wheat chips, or crackers.

Broccoli Cheese Soup

4 cups chicken broth
1 cup water
1 cup half & half
4 slices Kraft Cheddar Singles
1/2 cup all-purpose flour
1/2 tsp dried minced onion
1/4 tsp ground black pepper
4 cups broccoli florets (bite-size)

1. Combine chicken broth, water, half & half, cheese, flour, onion and pepper in a large saucepan. Whisk to combine and to break up any lumps of flour, then turn heat to medium/high.

2. Bring soup to a boil, then reduce heat to low.

3. Add broccoli to soup and simmer for 15-20 minutes or until broccoli is tender but not soft.

4. For each serving, spoon one cup of soup into a bowl and garnish with a Tbl. of shredded cheese and a pinch of parsley


HAMBURGER SOUP

1lb. Ground Beef
Brown and drain ground beef.

In large pan add all other ingredients along with cooked beef and simmer for 30 minutes.
1 Bag Frozen Mixed Vegetables
1 Pkg. Onion Soup Mix
1 Can Stewed Tomatoes
½ Cup Orzo (small pasta)
2 Beef Bouillon Cubes

Cheese ball

2- 8oz cream cheese, softened
1 medium green pepper, diced very fine
1 medium onion, diced very fine
2 Tbls horseradish
2- pkgs. Buddig dried meats, chopped fine

Mix all of the above ingredients together until well blended. Serve with crackers or celery stalks.

For best spreading results, let sit out for awhile to soften

Hi, here is a simple chicken crock pot recipe that you might try. I am also going to use a small sirloin steak sliced thin to make a pepper steak. The vinegar in the dressing will help to make the meat tender.

Easy Slow Cooker Pepper Chicken 

  • 4 to 6 chicken breasts
  • 2 green bell peppers, sliced
  • One onion sliced
  • 1 garlic clove chopped
  • 1 can chopped stewed tomatoes
  • ½ small bottle low fat Italian dressing 
  • Salt and pepper to taste

Place all ingredients in the crock-pot and cook all day on low. 


I know that many recipes do seem a bit overwhelming. I have never been one to go by the rules and recipes are the same for me.....If I can cut corners...then I cut them hard and still come out with a great meal...You can substitute many recipes with prepackaged seasonings. I make a great chilli and people rave about it....I use Williams Chili seasoning and have for years! Why mess with a great thing! I can make it a stronger chilli by adding a bit more of the seasoning from an extra package, or add a can of chili beans....What ever we like.  I add taco seasoning to make my Taco's or just use the meat with seasoning salt and a bit of garlic.  I put taco seasoning in cream cheese and then mix with cheddar cheese to make a filling for enchilada's for the family. If I want a quick brown gravy. I use a package of the seasoning and add a bit of soy sauce and seasoning salt to flavor it.....It is not near like my own beef gravy, but it is a great substitute when you are in a crunch! I sometimes even add a bit of wine to it to give it an even more flavorfull experience., or simmer some mushrooms and add to it for a mushroom gravy They think I make the best!!!  Italian seasoning seasons italian dishes just as well as buying all the ingredients and making your own and cheaper!  It's all in what tastes good to you.....I have been cooking and catering for years and years. At 57, that's a long time!  I am one of those Semi-Homemade type cooks, who thinks I need more time to do other things than sit and measure 39 items for one meal.  I still make homemade egg noodles and things that are important...but I cheat on all the other meals! If I have never heard of something.....why would I use it and ruin a perfectly good meal. Now if I was testing it, that would be different....I might try something.....In this day and with the price of food....I'm not going to try just anything!  My grandkids think I can make anything taste good! LOL But then yesterday they found nothing makes Whole Wheat Bread taste good!! LOL!
My suggestion is this.....look over the ingredients of a recipe....look at what you know you like....add and subtract from the recipe what you don't like and what you do....You may find you have your own new creation! 
I have not tried this recipe yet, but a friend gave it to me and I thought I'd share it with you. It did not have the onion or garlic in it, but for flavor, I felt it would be great with onion and a garlic clove.  So you see....your imagination is the only thing that limits you....Another thought is just go to the search engine and type in Low carb soups...or Easy crock pot recipes....and BAM!! They are there!! Good luck and make cooking simple but good!!  It's all what YOU or your family will like or eat.

I know what you mean about simple - if there are too many steps or ingredients, then I tend to skip it....

Try this for a snack or whenever:

1 small container of cottage cheese, small curd, fat free
1 small package of sugar free jello - any flaovr
1 smalll container of cool whip - sugar free or lite

Mix together - you can add fruit, but drain well...

Ideas:  orange jello with pineapple or mandarin oranges
             cherry jello with marachino cherries, chopped

I really like it without fruit, too... Lots of protein, low fat, filling and easy on the pouch

If you want a cake that is guilt-free (almost)....

Diet Coke Cake

Mix a dry cake mix with a can of diet coke and bake as called for on box.  I found one cake mix...maybe Pillsbury that had only 160 calories per serving.  It was chocolate.  If you want a white cake...mix with Diet Sprite or Diet 7-Up....diet cherry Coke or Pepsi with strawberry cake!!

Tastes like a cakie brownie :)
