I find that the best veggie soups are the ones where I don't use a recipe. I just gather whatever veggies sound good to me at the time, some beef stock and tomato paste (I prefer beef broth over chicken) and throw in a bunch of seasonings and simmer for an hour or so.

This is my quick easy delicious recpie

1-2lbs beef stew meat
2 cans mixed veggies drained
2 can whole kernal corn drained
1 can peas drained
2 cans diced tomatoes
1 can green beans drained
1 packet onion soup mix
1 can hunts spegatti sauce
salt pepper garlic powder to taste

throw it all in the crock pot on high for 6 hours and eat

sounds too easy and it really is and YUMMY!!!

Fall out soup recipe

this is seasonal--just use whatever veggies you have in bottom of frig or in freezer (or as my DH says whatever falls out of the frig, hence the name).  I never make it the same way twice.

4 cups water (or bouillon or chicken broth or veggie stock or whatever you have)
2 cans veggies of choice (stewed tomatoes or corn or green beans or pinto beans, etc)
2-4 cups of fresh veggies, cut up into chunks
seasonings:  choice of 1 tsp bullion or curry or Cajun seasoning or whatever you like
1/2 c rice or pasta or just leave this out if you want
can V8 if you have some handy
salt and pepper to taste

Put into a large pot, bring to boil and cook on low for twenty minutes or ready to eat.

Hi,

I always keep a freezer bag or cup in the freezer and put all my left over dabs of veggies there. When it is full then it is time for soup.

I don't use a recipe but usually just dump stuff in. 

my saved veggies
! couple of large cans of tomatoes
1 bag frozen mixed veggies
1/2 bag frozen chopped okra
a chopped onion
diced potatoes
stew meat cook all to peices or lean hamburger browned

Dump and simmer til its soup

I think from reading these recipes, you will find that even Veggie soup is a matter of your own tastes. I use stew meat or to go further I will brown lean hamburger rince and drain to remove as much fat as possible.
If you use the stew meat,You will need to add enough water to cover the meat. You need to season it well and cook it until it is very tender. A package of Lipton's Onion Soup mix is great for this.You can add a can of stewed or chopped tomatoes to this, as the acid in the tomatoes will help tenderize the meat. I Don't put the veggies in until the meat is tender. If you make to much for just one or what you need, pour off some of the broth and reserve it for other soups. I then add a can of tomato sauce. Once the meat is tender or, if you use the lean browned hamburger, it is a matter of dumping what you like in it....I use fozen corn as I like the flavor better, Canned green beans, just what ever you like! At times I will slice cabbage in quarters and put it in there too...I rarely add frozen mixed veggies as I don't care much for them...so again you just add what you like. I use fresh carrots to mine also..not canned. If you do this, they will need to be added to the meat broth just before it is done to allow them to coo****il tender...It won't hurt the meat to continue cooking while the carrots cook. I usually chop a couple of onions and add at this point so they can cook through too. 
Salt and pepper to taste, or add a good seasoning salt.  I also add garlic salt or a clove of garlic for even more flavor....Veggie soup is as easy as you need it to be. Have fun with the veggies you like. Now that my kids are grown....I get to add peas too!! Yahooo!
One more thing...Soups freeze well, so you could put leftovers in small sizes of containers, leaving room at the top for expanding when it freezes. That way you can have veggie soup, when ever you want!! This soup could also be blended to make it more tolerable in the post opp stages when allowed. It will still have the great flavors!

This one is SO simple and easy! My kids love it, and it takes me about 20 minutes to make it. I usually double the recipe, and i still dont have much for leftovers.

1 bottle V8 juice
1 lb. lean hamburger
1 Pkg frozen vegtables of your choice
Salt and Pepper to taste.

(If you would like to add an onion or bell pepper, its good too)

Cook the hamburger, add vegtables and then the juice. Coo****il heated through!
