This certainly qualifies for soft foods! I've tried it with ground turkey too. Not too bad.

Laab Moo (Pork Salad)

• 1 lb ground pork or Turkey
• 3 T lime juice
• 2 T green onion
• 2 T shallots or red onion
• 2 T cilantro
• 10 mint leaves
• 1 t red chilies powder, to taste (or less)
• 3 T Thai fish sauce

Put ground pork in a pot with a little bit of water (enough to prevent pot from burning) and stir until  cooked. Remove from heat.

Add the rest of the ingredients and mix them together. Make sure the flavor is a little sour and salty. Spice it according to your taste. Traditionally served with jasmine rice and fresh vegetables, i.e. cabbage. - I make it like a cabbage leaf taco. YUM!!!
