Thai Soup: Tom Yam Gung (sweet and sour shrimp)

I strained this and drank it pre-op and post-op. I would have withered away without it!!!

Tom Yam Gung (Sweet & Sour Shrimp Soup)

• 15-20 frozen shrimp- precooked and deveined
• 1 c straw mushrooms- ( I usually omit these)
• 1 stalk lemongrass, chopped & smashed
• 4 kaffir lime leaves
• 1 t salt
• 3 T lime juice
• 4 c chicken broth
• 3 tomatoes, quartered
• 4 red chili peppers, chopped- (Or less)
• 1 T cilantro
• 1 T green onion

Put chicken broth in a pot. Add lemongrass, kaffir lime leaves and red chili peppers. Bring broth to boil, add tomatoes, straw mushrooms, cilantro and onion. Add lime juice and salt. Taste soup to confirm sweet & sourness, adjusting as necessary, then add shrimp and cook for 1-2 minutes more.  Strain if on liquid diet otherwise. YUM- Eat up.

Thanks so much for posting this-it's one of my favorite restaurant things to order, and I've never managed to make it at home. I have all the ingredients except the kaffir lime leaves-I'm having trouble finding them, even at the Asian market! is there anything I can substitute?

My Thai friend came over tonight and told me that you can actually use lime skin peel as a substitute for the Kaffir Lime leaves.
