Breakfast Ideas??

I need some creative help with good Breakfast Ideas?? For the past 2 weeks all I've eatten is scrambled eggs or oatmeal with splenda and SF syrup?? Please help the quicker and easier to prepare the better...I'm not much the morning person. Thank you all so much! Crystal

I eat breakfast at work (no time before I leave the house lol). That way I drink a bottle of wate ron the way - anyhow to answer your question I eat:

Greek yogurt (1/2 cupy) with Kashi, Fiber One or another high protein high fiber cereal on it - maybe a couple strawberries. I add splenda to this because the greek yogurt I eat is plain.

Cottage cheese w/fruit (1/2 cup)

Quaker Weight Control Oatmeal

South Beach protein bar ( I like these the best)

Low carb/low sugar yogurt w/cereal

These seem to work for me, I notice on the boards that some girls have ham, cheese and tricuits for breakfast. As long as we are getting the protein!

I'm not good with breakfast ideas - I eat the same thing every day with a little bit of variation. I'm a HUGE fan of the egg white substitutes. So I mix that with some shredded cheese and protein of choice (depending on what I have, usually turkey pepperoni or diced chicken. Heat it up in the microwave for about 2 minutes and it's like an instant omelet.

I found these that you might try:

 

Egg Mockmuffins

 

Ingredients:

 

  • 1lb Ground Turkey
  • 1/2 onion
  • salt & pepper to taste
  • 3 cups Egg Beaters (or about 8 eggs scrambled)
  • 2oz mozzarella cheese  

 

Spray muffin tin with pam. Brown ground turkey with onion, drain, season to your liking. Fill muffin tins 1/2 way.  Pour 1/4 cup egg beaters in each muffin. Top with cheese. Bake 350 oven 20 minutes or until done. Eat and enjoy.  Can be frozen

Breakfast Sausage Balls

 

Ingredients:

 

  • 1 small onion-chopped
  • 1 each, red and green bell pepper-chopped
  • 1lb of Owens Sausage, I use the HOT, it is not hot it just adds flavor
  • 3 cups bisquick mix
  • 1/3 cup of milk
  • 2 cups of cheddar cheese-shredded

 

Mix everything in a bowl and make between 30-35 balls.  Heat oven at 350 and bake for 20-25 minutes.  I store the leftovers in a zip lock bag, and place in fridge-to reheat, I just place in a wet paper towel and microwave on 30sec intervels until heated through....

ZIPLOC OMELET (This works great !!! Good for when all your family is together or to pre-repare.  The best part is that no one has to wait for their special omelet !!!) Have guests write their name on a quart-size Ziploc freezer bag with permanent marker. Crack 2 eggs (large or extra-large) into the bag (not more than 2) shake to combine them. Put out a variety of ingredients such as: cheeses, ham, onion, green pepper, tomato, hash browns, salsa, etc. Each guest adds prepared ingredients of choice to their bag and shake. Make sure to get the air out of the bag and zip it up. You can freeze the mixture and just cook them as needed.  Thaw overnight in fridge.
To Cook:

Place the bags into rolling, boiling water for exactly 13 minutes. You can usually cook 6-8 omelets in a large pot. For more, make another pot of boiling water. Open the bags and the omelet will roll out easily. Be prepared for everyone to be amazed. Nice to serve with fresh fruit and coffee cake; everyone gets involved in the process and a great conversation piece.

You can roll it up in a tortilla and you have breakfast on the run, with no cleanup!!! Yeah!

These pancakes are great!  I make them all the time now instead of regular ones.  My family doesn't have a clue that they are healthy.

COTTAGE CHEESE PANCAKES

ingredients

1 egg or 1/4 c egg beaters (if you would like more of a crape

style add 1-2 more eggs. I used 1/2c eggbeaters and they were

very fluffy)

1/2 lowfat cottage cheese

1 package Weight Control oatmeal

directions

Put all the ingredients into a blender and mix until smooth.

Lightly spray skillet and place over low heat. When the skillet is

hot, spoon the batter onto the skillet and coo****il it starts

bubbling and has set up, flip and coo****il golden brown.

Makes about 4 pancakes. Serve with sf syrup or sf fruit spread.

Pancakes freeze well.

Each serving is 270 calories if usung eggbeaters.
