Cranberry Sauce Recipe

Since Thanksgiving is just around the corner, I thought I'd share this.  I found it in “500 Low-Carb Recipes” by Dana Carpender

Cranberry Sauce

½ tsp plain gelatin (optional)
1 C water
1 bag (12 oz) fresh cranberries
1 C Splenda

Combine cranberries, water and Splenda in a pan over medium-high heat (if adding gelatin, disolve it in ½ C of the water, then add to cranberries in the pot).

Bring to a boil, and boil hard until cranberries pop.

Kep in a tightly covered jar in the fridge.

2T = 4g carbs, 1g fiber

I'm going to Cape Cod next week where lots of cranberries are grown. I plan on getting 5 pounds or so and I was wondering what I can make with them and this is it! Thanks!

Awesome!  A friend brought me back a heap of cranberries last year.  They freeze very well.  Make what you need and freeze the rest in small bags.  Fresh cranberry whatever for a few months. :-)

Rich...Here are a couple cranberry recipes you might like to try:

CRANBERRY GELATIN SALAD

1 lb. fresh cranberries
2 cups ground apples
1½ cups Splenda
1 teaspoon lemon juice
6-oz. pkg. sugar free raspberry gelatin
1/2 cup chopped walnuts
1/2 cup chopped celery

Grind cranberries and apples separately in food grinder. Combine cranberries, apples, sugar and lemon juice and let stand several hours, stirring occasionally. Prepare gelatin according to package directions. When cooled, but not set, stir in fruit mixture, walnuts and celery. Pour into serving dish and refrigerate until set

Cranberry Pecan Salad

3 (3-ounce) packages sugar free orange-flavored gelatin

3 cups boiling water

2 1/2 cups fresh or frozen cranberries -- chopped

1 1/2 cups finely chopped celery

2 oranges -- diced

1 (8-ounce) can unsweetened crushed pineapple -- undrained

2 tablespoons grated orange peel

1 cup Splenda

2 tablespoons lemon juice

dash salt

3/4 cup chopped pecans

In a bowl, dissolve gelatin in boiling water. Stir in cranberries, celery, oranges, pineapple with liquid, orange peel, sugar, lemon juice and salt. Chill until partially set. Stir in pecans. Pour into 8-cup mold. Chill until firm.

Per Serving (excluding unknown items): 140 Calories; 5g Fat (31.0% calories from fat); 1g Protein; 25g Carbohydrate; 2g Dietary Fiber; 0mg Cholesterol; 15mg Sodium.

Richard....you can't eat 5lbs of cranberries!! You could make jam out of it!  You could send some to Oklahoma!  This does sound good though huh????  By the way! Your Disney pic is great! You are doing awsome!!
