Jack O'lantern Soup

  • 2 Tbsp. Bertolli® Classico™ Olive Oil
  • 1 cup frozen chopped onion
  • 1 can (15 oz.) pumpkin
  • 1 quart reduced sodium chicken broth
  • 1/2 tsp. seasoned salt

In 4-quart saucepot, heat Bertolli® Classico™ Olive Oil over medium heat and cook onion, stirring occasionally, 4 minutes or until tender. Add pumpkin and cook, stirring frequently, 4 minutes or until pumpkin darkens. Stir in broth and Seasoned Salt. Bring to a boil over high heat. Reduce heat to medium and cook, stirring occasionally, 10 minutes. Garnish, if desired, with sour cream making a "Jack O'Lantern" design on the soup surface.
