Comfort Food Ideas Needed

Hey...I'm new to this board.....but came here in search of some quick (as in less then an hour from walking into the kitchen to stuffing my face) recipes.  Due to cir****tances beyond my control I am frusterated, angry, emotional and in dire need of comfort.  Unfortunately my NONFOOD source of comfort is what has pushed me over the edge. 

I had the DS so fat is not a problem.  The higher the fat content the better for me.  But I still want to watch my suger and white flour intake.  I need comfort, not regain.  LOL.

Right now, it's all I can do to keep walking past the frozen oreos in my freezer. 

So please, post your (somewhat) healthy comfort recipes PLEASE!

Coconut Chicken
1 C. Flaked Coconut
1/2 C. Flour
1/2 t. Salt
1/4 t. Black Pepper
1/4 T. Garlic Powder
1 1/2 lbs.  Boneless Skinless Chicken Breast Halves
1 Egg, lightly beaten
1/3 C. Butter/Margarine melted or EVOO (which is what I use--requires less & better for you) 
1 C. Apricot Preserves, optional
2 T. Dijon Mustard, optional

Heat over to 400 degrees. 

Mix coconut, flour, salt, pepper and garlic powder in medium bowl.  Dip chicken into egg, then coat with coconut mixture.  Place in shallow baking pan. 

Drizzle with Butter or EVOO. 

Bake 25 minutes or until chicken is browned and cooked through, turning once.  If you  use a meat themometer, chicken should read 165 degrees.

You mix the preserves and mustard for a dipping sauce.

Mock Danish Low Carb       

2 oz cream cheese
1 egg
2 tsp splenda
½ tsp vanilla
pinch cinnamon

topping
1T butter
dash of cinnamon
dash splenda
(also yummy with butter melted and DaVinci SF Pancake Syrup!)


Microwave cream cheese 15 seconds in a small bowl.

Add egg and mix well with a fork.

Add splenda add vanilla and cinnamon and mix well.

Microwave on high for 90 seconds. (I divided the recipe ( using 1 egg and 3 oz cream cheese) over three muffin cups lined witht he paper cups and baked it in a 350 oven for about 20 minutes. Okay warm but FANTASTIC cold. )

Topping, mix all together.  Set aside

Take out danish and let cool. Scrape sides.

Microwave topping 15 seconds.  Mix well again.  Pour on Mock Danish.

Faux Potato Salad

1/2 zucchini, cubed
2 hard boiled eggs, chopped
1 tsp mayo
2 Tbl FF sour cream
1 tsp mustard
3 shakes dry, minced onion
1/2 pickle spear, cubed
salt and pepper to taste
paprika


After cubing zucchini, microwave for 2-3 minutes until solft and set aside to cool.

In a separate bowl, mix mayo, mustard, sour cream together.

Add chopped eggs.  Mix well.

Add zucchini and pickles to egg mixture and stir to combine.

Add salt and pepper to taste.

Sprinkle with paprika.

One of my favorite's is a time saving savory lentil soup recipe. 

I box of steamed lentils (Trader Joe's)

1 package of breakfast Turkey Sausage

Chicken broth

(and the next items I usually buy from my local market's salad bar already cut and diced)

Shredded carrots (2 carrots)
diced red onion (1 medium)
a mix of red, yellow and green bell peppers

Fry up your Turkey Breakfast Sausage (which by the way has all the spices in it that you will need for flavoring) and set aside.

Caramelize (in olive oil) your carrots, onions and peppers.

Combine all your ingredients in a pot and add 2 to 3 cups of chicken broth and let simmer for approx 1/2 hour.

With the cold weather coming it is a satisfying high fiber, low fat meal.  My son loves this served with some crusty sour dough bread (which I cannot eat).

Pizza Potatoes

1 box of Betty Crocker Scalloped Potatoes
1/2 lb ground beef, Italian sausage or pepperoni
        (I use some of it all sometimes)
1 can of tomatoes diced
1 T Italian spices
1/4 t garlic powder
1 1/2 c water
1 pkg shredded mozzarella cheese

Brown meat put to the side. Combine tomatoes, water and spices in sauce pan bring to a boil.  In a baking dish (9x9) dump the potatoes and sprinkle the sauce mixture (dry) over them.  Pour in the tomato mixture and stir it in, then add meat mixture.  Bake at 350 degrees for 30 minutes then top with cheese and bake another 5 minutes or until cheese is bubbly and starting to brown just a touch.   Serve with a salad.

My kids loved this when they were growing up. Especially when they came back from the orthodontist they would puree some in the blender and eat it because it did not bother their mouth!!
