Band friendly crockpot recipes

Hi all.

I'm looking for some easy cooking recipes.  I'd really appreciate any and all band friendly crock pot recipes out there.  Everything except beans.  I just don't care for them.

I just bought the most amazing crock pot book - it's called "Fix-It and Forget-It Lightly. Healthy, Low-Fat Recipes for your Slow Cooker." It's by Phyllis Pellman Good. I highly suggest getting it. It has around 500 recipes in it. Good luck.

Well now this is a book that I must have.  Thank you.  I knew about the original fix it and forget it but I didn't know they had a low fat version.  Thank you thank you thank you!!!

Here are a few:

Crock Pot Beef Stroganoff
Out of : 200 Low-Carb Slow Cooker Recipes

2 pounds beef round, cut into 1" cubes ( I use chuck )
1 large onion
8 ounces canned, sliced, mushrooms undrained
14 ounces canned beef broth
1 teaspoon beef bouillon concentrate
2 teaspoons Worcestershire sauce
1 teaspoon paprika
8 ounces cream cheese ( light or regular )
8 ounces sour cream ( light or regular )

Put the beef in your slow cooker. Put the onion on top, then dump in the mushrooms, liquid and all.

In a bowl, mix the beef broth with the bouillon, Worcestershire sauce, and the paprika. Pour into the slow cooker. Cover the slow cooker, set it to low, and let it cook for 8 to 10 hours.

When the time's up, cut the cream cheese into cubes and stir it into the mixture in the slow cooker until melted. Stir in the sour cream.

Serve over your choice of carbs (faux mashed potatoes would be a good low carb choice).

Yield:  8 servings

Crock Pot Beef and Broccoli
Based on a Chinese Stir Fry

1 pound beef round, cut into 1" cubes ( I used beef chuck )
4 ounces canned, sliced mushrooms, drained ( I used fresh, probably a small package worth)
1 medium onion, cut into wedges
1/2 cup beef broth
1 teaspoon beef bouillon concentrate
1 tablespoon splenda
1 teaspoon grated ginger root ( I used powdered - it was all I had )
1 tablespoon white wine
2 tablespoons soy sauce
1 clove garlic, crushed ( I used 4 - we love garlic )
1 teaspoon dark sesame oil
1 tablespoon sesame seeds
2 cups frozen broccoli florets ( I used fresh )
Guar or xanthan ( I just drained it instead of thickening the sauce )

Combine the beef, mushrooms, onion, broth, bouillon, splenda, ginger, sherry, soy sauce, garlic and sesame oil in your slow cooker. Sprinkle the sesame seeds on top. Cover the slow cooker and set to low. Let cook for 8 to 10 hours.

When the time is up, add the broccoli to the slow cooker, re cover the slow cooker and let it cook for another 30 minutes. Thicken the juices with a little guar or xanthan.

Yield:

Crock Pot Barbeque Chicken

2 pounds chicken thighs without skin
10 ounces condensed tomato soup
3/4 cup chopped onion
1/4 cup vinegar
3 tablespoons sugar free maple syrup
1 tablespoon worcestershire sauce
1/2 teaspoon salt
1/4 teaspoon basil
1/4 teaspoon thyme

Place chicken in slow cooking pot. Combine all other ingredients and pour over chicken. Cover tightly and cook on low for 6 to 8 hours.

Per Serving: 122 Calories; 3g Fat (22.8% calories from fat); 14g Protein; 4g Carbohydrate; trace Dietary Fiber; 54mg Cholesterol; 405mg Sodium.


Pork with Apples and Sauerkraut

1 Pound Boneless Pork Top Loin Chops
1/4 teaspoon Salt
1/4 teaspoon Pepper
1 teaspoon Olive Oil
1 Packet Splenda
3 Medium Golden Delicious Apples, peeled and chopped into small pieces
1/4 teaspoon Cinnamon
1 Cup Sauerkraut*
1/4 teaspoon Caraway Seed

Spray a skillet with non-stick cooking spray. Cook the pork on both sides to brown and then cut into bite size pieces. Spray your crockpot with non-stick cooking spray. Place the pork into the crockpot followed by the salt, pepper, oil, Splenda, apples, cinnamon, sauerkraut and caraway seed. Mix well to combine. Cover and cook on low for 3 hours or until the apples are tender and the pork is no longer pink.

*Use sauerkraut that comes in a glass jar or plastic bag. The kind in the metal can tends to taste like metal.

Serves: 3 (approx. 1 Cup Each)
Per Serving: 265 Calories; 8g Fat (28.8% calories from fat); 28g Protein; 19g Carbohydrate; 5g Dietary Fiber; 68mg Cholesterol; 759mg Sodium.
