Stuffed  Gourmet Mushrooms

mushroom cups stuffed with spinach, prosciutto, white wine and provolone cheese.

Ingredients:

8 large mushroom cups

1/2 cup grated provolone cheese

1/4 cup frozen spinach, thawed and drained

2 tablespoon sliced and diced prosciutto, you can substitute bacon, but it’s not as nice…

2 teaspoon basil pesto, if you don't know how to make it..it is so easy google recipe!

1 teaspoon olive oil

2 tablespoons quality white wine (I use Yellowtail or an Artesa wine, or even Conundrum)

 Salt and pepper to taste.

 

Preparation:

 Mix the provolone cheese, spinach, wine, and prosciutto in a bowl.

 Wash the mushrooms and remove the stems.

 Season them with salt and put little pesto inside every mushroom cup.

Fill the mushrooms with the stuffing and brush them outside with olive oil.

 Arrange them on a baking tray and bake until the mushrooms are soft and the cheese is melted and bubbly.

15-20 minutes at 350 degrees

The serves 4 people and the carbs are around 5.5 grams per serving

I'm going to make these to bring to a pot luck Christmas party. BTW, when I see the large mushrooms on the reduced produced rack, I buy all they have,de-stem and freeze them. I stuff them while they are still frozen and then bake. The come out wonderfull.

Highest Known Weight  =  370#  /  59.7 bmi  @  5'6"

Current Weight  =  168#  /  26.4 bmi  :  fluctuates 5# either way  @  5'7"  /  more than 90% EWL
Normal BMI (24.9)  =  159#:  would have to compromise my muscle mass to get here without plastics, so this is not a goal.

Glad you liked my idea. I freeze any type of mushroom, when I see the sliced ones reduced I put them in the dehydrator and then store in quart mason jars. They are perfect to add a handfull to any soup or stew. In my pre-op days I would add a handfull to a pot of rice when I first put it on. It made the best rice.

I bought large mushrooms today with the intention of making my sausage stuffed mushrooms, and I can't find the recipe anywhere!  Now, I have a great alternative.  Back to the store for prosciutto (one of my favs!).

I love mushrooms and want to do this so bad.
