I recently made some home made vanilla ice cream for the residents at the nursing home that I do volunteer work at...I made it with splenda, and low fat milk and creams...They loved it, but are wanting me to try making them some chocolate...Anyone have any ideas on what to use to flavor it?  Other than protein powder mixes...Sure would appreciate any help that you might be able to give me...Thanks

Tammy,  you could use the syrups from torani or from davinci....but I'd use bitterweet chocolate incorporated into my mix via some warm cream....blend it in and that way, the dark chocolate is healthy for the older people and they don't get loaded down with sugars or alcohol sugars.

I've heard of people also using natural carob....maybe even some sugar free alond bark, but I hate using that stuff....  So there's a couple of ideas that you might be able to try...

Hi Tammy,

Both Torani and DaVinci have sugar free syrups.

Torani has 30 flavors:

DaVinci has 45 flavors:

They're great to add to water and many different recipes.

Ok, this is my high protein ice cream recipe (works awesome for post WLS). For a 2 person serving, I use
1/2 can evaporated skim milk
1/4 cup powdered milk
1/2 package sugar free pudding (any flavor, chocolate fudge is delish)
1 tsp torani or davinci syrup (any flavor)
1 egg (use egg beaters since their pasturized)

Blend in a blender, put in the ice cream maker for 30 minutes. It comes out soft serveish, so I put it in the freezer for about 1 hour. Right before it's done, I add in all kinds of goodies... My favorite so far has been 1/2 tsp coconut extract, toasted unsweetened coconut in vanilla ice cream, then put a dollop of sugar free cool whip on top... Coconut cream pie! it's amazing!

Hi again Tammy,

Here is the recipe I use from my Cuisinart Ice Cream maker, with my own modifications. The original recipe is on page 9 of the recipe book that was included when I bought it this past summer.

Chocolate Fudgsicle Ice Cream

2 packages ( 3.4 -3.9 oz. ) instant SF Chocolate Pudding ( Or Double Chocolate)
3 cups of chilled Soy Milk
2 scoops of vanilla EAS Whey Protein ( since it's all I have on hand, rather than chocolate)

Place all of the ingredients in a mixing bowl and combine well. Turn the machine on and pour mixture into the freezer bowl and let it mix until it thickens, about 20-25 minutes. Serve immediately or store in the freezer in an airtight container. I nuke it for about 45 seconds when I want a serving from the freezer.

Note; at 15 minutes I sometimes add in a 1/2 cup of various additions, usually some chopped walnuts or almonds.

Hope this helps.

Diana
