Rouladen??
Oh my yes! My Mom's recipe from Germany and it's WLS friendly.
6 slices 2-3" wide by 5-6" long thinly sliced beef (Carne Asada beef will do in a pinch)
mustard
6 slices bacon
dry minced onion
3 spears dill pickle
1-2 T Olive oil
1 C water
Lay out slices of meat.
Spread mustard thinly over each slice of beef.
Lay one slice of bacon, longwise, on top of the mustard.
Liberally shake minced onion the length of the mustard.
Cut pickle spears in half widthwise, making them shorter.
Place 1 pickle spear half across short side of beef.
Roll beef up around pickle and secure with a toothpick.
Heat olive oil in a pan, add rouladen and brown all sides.
Toss them in the crock pot, add water and lt them cook on high for 5-6 hours.
Mom used to make them in the pressure cooker for 30 minutes and add flour and make a gravy.
You can use gluconnan powder and be low carb. (Mix in cold water first or you have major gummy lumps). Or make it with flour for others and just use the juice for yours, that's what I do.
Serve with mashed rutabaga and green beans.
Oh yum!
