I was wandering if anyone might have a recipe for the tuna salad and a chili recipe? I went to make tuna salad with light mayonaise and sugar was the 2nd ingrediant. If anyone knows of any other recipes, can you please share some? I am able to eat some meats now and need some help with recipes.

When I make my tuna I put the following in it...

2 cans of water packed tuna ( Drained )...Diced up onion ( about 1/3 cup)...diced up celery ( about 1/2 cup)...3 boiled eggs ( chopped )...use either mayo or miracle whip ( your choice )...I usually chop up anywhere from 1 -2 apples in mine ( depending on size)...add a small handful of raisins ( optional)...dash of salt and pepper...You can add a dash of garlic powder if you want, I don't though...I like the crunch so sometimes I add some diced up water chestnuts to mine...I usually sprinkle a dab of splenda in mine cuz I prefer it...Can serve this on a lettuce leaf, cracker, slice of bread, whatever you wish...

I made a really quick and easy chili last night...I bought a can of chili, which was Hormel turkey with beans added...added a can of pinto beans, chopped up and added some onions, and green peppers...tossed in a can of mushrooms...mixed in about 1/2 can of water...Cooked until onions and green peppers were tender...Placed in bowl and added a scoop of low fat sour cream on top...Sprinkle of low fat cheese...It was really good...

My tuna salad is not fancy, but delicious!

I start by opening a can of sliced water chestnuts.  I drain the liquid & place them into a ziplock baggie... I then cover them in pickle juice & seal the bag.  I put them in the fridge for about an hour.  (The longer you let these marinate, the tastier)

I use 2 cans of light chunk in water.  I squeeze the can dry, then flake the tuna in a big bowl.  (I go through it, making sure there are no bones or little icky parts)

I dice 6 large Zesty Dill Pickles  (I like the Vlasic Brand)

I dice up the water chestnuts

Add the pickles & the water chestnuts into the tuna & mix.

Then I add a splash of pickle juice (It keeps it moist, so you don't have to add too much mayo)

Add light mayo until it binds the mixture.  (I usually add 3-4 T)

It is sooo yummy.  Before banding, I used to eat it on Oatnut Bread, but now I have it on Ak-Mak... and it's still delicious.

My friend adds raw onions to hers (I don't care for onions)  This would also be wonderful in icegurg lettuce wraps.

*hugs*
