Coleslaw and Coconut Chicken/Shrimp recipes needed

Hi
I am searching for recipes for coleslaw, coconut shrimp and coconut chicken...if anyone has one or a few to share, I would greatly appreciate it!

Coconut Shrimp
Dragons1Beast ~Pensacola, FL OH BB

2 tbsp extra virgin olive oil
1 green pepper
1 red pepper
1 bunch green onions
3 cloves garlic
1 jalapeno pepper
1 med/large tomato
1 - 2 lbs peeled shrimp
1 can coconut milk
1 lime

chop all veggies, mince garlic and jalapeno. 

Add all veggies into a saute pan with EVOO except for the tomato.  

Saute until veggies are soft.. add tomato and heat thru. 

Add the shrimp and coo****il shrimp is done. 

Add the can of coconut milk.  Heat thru..  

When done, pour into serving dish, squeeze juice of the lime over it and then top with chopped parsley... enjoy!!

4 grs sugar per serving

Indonesian Coconut Chicken in the the Crock Pot

6 chicken thighs (remove skin)
1 medium onion, diced
2 cloves garlic, minced
1/2 tsp salt
1/2 tsp pepper
2 tsp. ground cumin
2 tsp. ground coriander
1/2 tsp ground fennel
1/2 tsp. ground cinnamon
1 c. light coconut milk
1 c. water
1 tbl. lemon juice


Spray in the inside of the crockpot with Pam. Put the chicken in. Put the onions on top of it. Combine the rest of the ingredients and pour on top. Cook on low heat 6-7 hours.

Just an FYI - coconut milk has over 500 calories in it alone. So you're looking at a pretty hefty calorie dinner by making it. However, I have substituted the coconut milk with some cream and Torani SF Coconut syrup - it's not the exact same taste but doesn't taste bad either. Good luck.

SF Coleslaw

pre chopped coleslaw mix (refridgerated produce area)
apples (red, pitted and chopped, skins are okay and add nice color)
mayo ( made with canola oil)
splenda (to taste)
pepper


I dont have the exact figures, I havent had the chance to make it yet but a relitive made it for a family reunion and OMG it was awesome!  And so much better since it was sugar free and
nearly fat free.  Also I've never put apples in my coleslaw but it adds a really nice flavor and natural sweetness.  Hope you enjoy!

*** Note with Mayo( canola)  it speads a lot better than regualr mayo, so keep in mind a little goes a long way!

I have a recipe for a sweet/sour cole slaw that my husband loves.

1 pkg. cole slaw mix (shredded cabbage & carrots)
1 small onion-diced

Dressing:
1/2 cup Splenda
1/3 cup white vinegar
1 ½ tbls. salad oil
dash of :
salt & pepper
celery salt
dill
garlic salt
onion salt

Allergan 10 cc band:  First fill: 4cc'c  9/8/08   Second fill: .9cc's  10/13/08  
Third fill:  1cc  2/11/09....   Total in band -- 5.9cc's   Very slooooow weight loss!

 BW- 273 /  CW -250 /  GW- 170     Total weightloss to date:  23 lbs. ( in 10 months )  Sept. 22, '09-- Had .2 cc's removed from my band.  Slowly gaining back the weight.  Up 10 lbs. CW- 260  Lapband not working for me!
