This is sooooooo good. I mean terrific. I will tell you i did get it off recipezaar, but made a few changes this is a must try.

1 two pound spagetti squash Poke with fork and bake at 350 for 45 minutes
after it is baked and cool, slice open and remove seeds. removes sqush strands and place in bowl

1 container heavy whipping cream ( lite whipping cream works too. I have tried it both ways)
2 tbsp sage chopped ( fresh is much better and i used more)
4 cloves garlic smashed ( can use less if you desire)
4 oz parmesan shreeded cheese.

Cook all the ingrediants except squash over medium heat until thick enough to stick to spoon, add salt and pepper to taste. Poor on squash and if desired add remaining parmesan cheese. This stuff is the bomb!
Fresh sage adds a better taste and of course, i like it with lots of garlic and the heavy cream. But it is good with the lite cream as well.

Enjoy! Tiss squash season!!!!

COWBOY you will love this one

This sounds so food I went to my Caloriecount.com and it rates pretty well!!! Here are the exact figures, and I assusmed it made 6 "normal" servings, so for us you can maybe divide the figures in half  or a whatever...

I uswed the light whipping cream and added Italian turkey sausage to help with protein (it really didn't make much of a difference).

My favorite way to have spaghetti squash. My future hubby and I just love this squash. I like to make 1/2 a squash for this and the other half for other squash dishes. The best of both worlds. I to love recipezaar there's great recipes there. Christine (internetnut)

Shauna, yes it is kinda like an alfredo. The sage adds a really nice flavor.the first time i made it , i didn't add fresh sage and it wasn't as savory. I think the squash sorta has a sweet flavor so the two flavors clashed a bit, but on 2'nd try....out of this world. Let me know how you like this.
