Aunt T's SF Granola
I make this for my nieces and nephews but the whole family loves it.
1 1/2 sticks of I Can't Believe it's Not Butter
1 Cup (packed) Splenda Brown Sugar
1/4 Cup Sugar Free Honey ( I got it at Wal-Mart)
2 Tablespoons of Almond Butter
2 teaspoons of Vanilla Extract
2 Tablespoons of Torani SF English Toffee syrup or you could use Caramel
2 Cups of Old Fashioned Oatmeal (dry)
2 Cups of Nuts (I used a mixture of sliced almonds, pecans, walnuts and cashews)
2 Cups of dried fruit ( raisins, cherries, blueberries, cranberries & mixed fruit)
1/2 Cup Unsweetened Coconut
1 scoop of Vanilla protein powder
Directions: Preheat oven to 350 degrees.
In a small saucepan melt butter. Then add brownsugar, mix till disolved. Then add the almond butter. Mix well. Add SF honey, mix. When brownsugar starts to bubble and get foamy take off the heat and add the vanilla and the english toffee syrup. Put heat on low and put pan back on heat to keep warm.
Take a large cookie sheet lined with non stick foil or foil sprayed with pam.
Mix oatmeal, nuts, fruit and coconut and 1 scoop of vanilla protein powder. Then put on the foil lined cookie sheet.
Pour the brownsugar mixture over it. Use a spatular to mix.
Place in oven for 15 mins. Then take out and mix again while it's warm to make sure everything is coated. Then set cookie sheet on a rack to cool. This does make a large batch. You can put in an air tight container with lid or in Zip-Loc bags.
This is yummy on plain yogurt too. Hope you enjoy it as much as we have.

I'm sorry Carole. I usually don't figure up the calories. I'm usually figuring the protein and making sure that I don't have any sugar. I Really should start keeping track of the calories too. Next time I make some I'll figure it out and I will post it. I will probably make some this weekend. Teresa M.

I can't believe it's not butter 90 calories per tablespoon I'm not sure how many tbsp per stick but I immagine it's several probably at least 4 so that would be another 360 calories min

So a minimum for this would be 5000 calories per batch, and probably a bit more than that depending on your protein powder you use.

Sorry, I didn't mean for it to sound like you ate it all. Since I didn't know what the portion size was, all I could do was give the total calories.
It does sound good though. My problem is I know I couldn't just have a taste of it. I'd be into it all day long.
