Oopsie Rolls: REALLY Good Low Carb Bread
I made a recipe I found on a low carb website. OMGo****'s SO good! It's called oopsie buns and I added kalamata olives and rosemary because it used to be one of my favorited breads (3 years ago when I could still eat bread). Basic recipe below.

Makes 6@ about 85 calories a piece, >1 carb per
3 large eggs
1 pkg Splenda
dash of salt
pinch of cream of tartar
3 ounces cream cheese (not Tbsp!) Do not soften!
Preheat oven to 300 degrees F.
Separate the eggs and add cream cheese to the yolks. Use a mixer to combine the ingredients together.
In a separate bowl, whip egg whites and cream of tartar until stiff (if you're using the same mixer, mix the whites first and then the yolk mixture).
Using a spatula, gradually fold the egg yolk mixture into the white mixture, being careful not to break down the whites.
Spray a cookie sheet with non-stick spray and spoon the mixture onto the sheet, making 6 mounds. Flatten each mound slightly.
Bake about 30 minutes (You want them slightly softer, not crumbly). Let cool on the sheet for a few minutes, and then remove to a rack and allow them to cool. Store in a loosely open sack and allow to rest on the counter before use (otherwise they might be too moist). Can be frozen.
Notes: If you are making these to be savory (for burgers) you can add dry mustard and dill or other seasonings to the yolk mixture. If you want a more sweet roll, add a very small amount of stevia natural sweetener to the yolk mixture.
Try making frech toast, strawberry cake, hamburger buns, pizza, pancakes..check out the website for lots of ideas.

There are a number of breads there.... I like the idea of making my own... i miss focaccia bread and i have one of the best recipes for it.... I still make it for my guests and other people in my area smell it and come running to my door asking for a bit...lol...

Thanks, T. I checked it out. It would have been nice if they offered one offs. I don't order a case of anything before I taste test it. ;-) No matter, bread was never my problem. Don't stick potato salad, mashed potatoes, fresh fried potaotes with onions, ok any potato dish, under my nose though! LOL
I do love that the house smells so good. Sniffing deeply...rosemary wafting through the house. mmmmmmmmmm And hubby liked it too.

One of the things that drives me crazy with packaged food is they give you the nutritional information for 1 serving and put 1.5 servings in the package! Have you EVER cut something in thirds so you're sure to have 1/3 less than the nutritional value on the package? OK, so have I and it's a PITA. I find it so misleading.

Use 1 yolk and extra egg whites in the splenda/salt mix part of the recipe. I buy a carton of egg whites. Fewer yolks, less yolky taste. :-)
Using the rosemary overpowered any egg flavor for me. I think garlic, onion cheddar, any SF jello mix would do the same.
My leftovers were crunchy today so I had pizza instead of grilled cheese. Oh my, it was good!

These are the same as the old Atkins Diet Revolution Rolls except they used cottage cheese instead of cream cheese. They are good if you make some egg salad or tuna salad or chicken salad or salmon salad to stuff inside, and then you have a high protein lunch all in one little roll.
