Couscous Ideas Needed Please

Hello, Happy Thanksgiving All!

If anyone has some couscous recipes they could share, muchly appreciated.  3 mnth RNY post-op, looking for new easy to digest recipes with added protein.

Allrecipes.com is a great place to start your search.  They have a whole list of couscous recipes ( http://allrecipes.com/Search/Recipes.aspx?WithTerm=couscous& Page=1 ).  Of course, I am also just a big fan of the Near East brand of couscous that I can buy at my local store and comes in flavors like curry, roasted garlic and olive oil, parmesan, etc. ( http://www.neareast.com/#products/couscous ).  That website also has a link for recipes.Amy

This is my favorite pre-surgery cous cous recipe.   Since surgery, I now serve it with a piece of cold salmon on top.

COUSCOUS WITH SUN-DRIED TOMATOES & SPINACH

·        10 sun-dried tomatoes, about 1 ounce (not oil packed)

·        1 package (10 ounces) couscous        

·        2T olive oil 

·        2T red wine vinegar

·        1/2t salt

·        1/2t sugar

·        1t prepared mustard

·        1/4t coarsely ground black pepper

·        1 cup golden raisins        

·        1 large tomato, diced

·        1 bunch spinach (about 1 pound),tough stems removed and coarsely chopped

 

1 Place sun-dried tomatoes in a small heatproof bowl: pour 1 cup boiling water over tomatoes.  Let stand for 5 min to soften; drain and chop.

2  Prepare couscous as label directs, but do not add margarine or butter

3  In medium bowl, mix olive oil, red wine vinegar salt, sugar, mustard, and pepper.  Add raisins, diced fresh tomatoes spinach, and couscous; toss to mix well.  Makes 4 servings

 

Each serving: About 490 calories, 15 g protein, 94 g carbohydrate, 8 g total fat (I g saturated), 0 mg cholesterol, 395 mg sodium

Am not for sure what couscous is?  If I am correct it looks similar to rice?  If so, does it expand like rice does...I love rice and miss it, but my pouchie just doesnt like rice, or pasta...Where do you buy this couscous at, meaning what section of the grocery store?

Its great and very easy to cook.  Just bring water or stock to a boil, add couscous, cover, remove from heat, let sit for 5 min, then fluff and enjoy.  Super simple.  I think it's near the rice in the store.  Can't remember.

Do you know if couscous swells up like rice does, because rice makes me dump bigtime????

Yes but maybe not as much.  Liquid to couscous ratio is 1 to 1.  I think rice is 2 to1.  In other words I think rice swells more than couscous.    However, I'm sot sure.  I usually cook instant brown rice.  I have the Realize band so I not familiar with dumping.  Sorry.

I will have to ask other RNY'ers if they can eat couscous and see what kind of responses I get...I appreciate all your time answering all my questions...if I might ask another questions, haha, What is the realize band?  Is that new?  Evidently you dont dump with that?

The Realize Band is like the Lap Band.  Just a little different.  It's wider and made by a different company.  There are probably other differences too I just can't think of any right now.
