Sugar Free/NSA Apple Recipes - Caramel Apple Crisp? Apple Pie? Others?

We are going to an apple festival this weekend and in years past, I loved their hot baked apple crisp with caramel sauce (full-sugar of course).  I'm feeling a bit envious that my family gets to indulge and I don't, so if you have any sweet apple recipes you could share, I'd appreciate it.  I plan to make myself a small portion of a sugar-free alternative to enjoy later.

Sorry.  No recipe here.  I just wanted to say "I feel your pain"...LOL.  It was the Fall Apple Festival at work today.  No apple dumpling for me...but I did bring DH some food home.  Lucky dog..LOL.

I had a can of no sugar added apple topping sitting in the cupboard. Recently, after a visit to Golden Corral and seeing their no sugar added desserts, it sparked an interest in my apples. But, what on earth could I possibly use as a crust for either a pie, cobbler, or crisp? So I asked a few friends on Bariatric Eating. I was reminded by my friend Linda of her famous Caramel Apple Crisp recipe (which I've made before and it is wonderful). I thought about using only the topping crust portion of her recipe and pouring it on top of my canned apples. This would also work well with no sugar added cherries. You see, I am not the "from scratch" kind of cook. I am for the easiest, most non preparation method possible!

Ingredients for Apples:

  • One can no sugar added Walmart generic apple topping dumped into glass bread loaf dish
  • Add cinnamon & splenda, chopped pecans
  • Add sugar free caramel syrup (such as Torani or Cinnabliss if you have it) I did not add it to my recipe and it needed some caramel "oomph"
  • Few drops of Almond extract

Ingredients for Crust: (Note: I halfed this crust recipe, but this is Linda's original)

  • 1 1/4 cup oatmeal
  • 1/2 cup almond flour
  • 1/4 cup Splenda
  • 1/4 teaspoon cinnamon
  • 1/4 cup butter, melted

Dump the crust on top of your apples. I decoratively arranged pecan halves on top and drizzled with Cinnabliss caramel sauce on top. Bake at 350 degrees for 30 minutes. Cover with aluminum foil and bake for an additional 15-30 minutes. This recipe is best eaten warm. The crust can be somewhat soggy if chilled or cooled. Add a scoop of sugar free or low carb ice cream for an ala mode affect.

How about an easy baked apple recipe?  Core your apple(s) and peel down an inch or so.  Place in baking dish.  Pour sugar free raspberry or cherry (or other berry flavor) soda over all. Sprinkle with cinnamon and nutmeg.  Bake (I think at 350****il tender.  You can top with some SF cool whip if desired.  These are really good.  One thing I do is put a few drops of food coloring into the soda first because the sodas I use don't have any color in them and having the red coloring adds to the appeal, for me.  The soda soaks into and cooks into the apples.  This is a very very old ww recipe from the original cookbook.

Here is my apple crisp obsession: I just invented this yesterday.

1 small apple chopped in bite sized pieces
1 tsp cinnamon
1/4 tsp splenda brown sugar

Mix ingredients in an oven safe bowl (I use a soup bowl)
In another bowl mix 1 packet of Quaker Weight Control oatmeal (it's got 7grams of protein!)
2 TBS chopped pecans
1/4 tsp sugar free syrup (Torani)
1 tsp smart balance butter melted
The mixture will be crumbly, top the apple mixture with the oatmeal mixture, bake at 350 for about 30 minutes. I eat about 1/4 of the apple crisp with a scoop of vanilla protein ice cream, it is amazing, I swear!
