Healthier Baked Oatmeal

I made this for my breakfast this morning to warm up the house. This was good! I cut the recipe in half so I didn't have so much on hand. The recipe posted said they serve there's with maple syrup and a pat of butter. I served mine with a few swirls of sugar free log cabin syrup. Hope you enjoy this recipe! Christine (internetnut)

Directions

  1. 1
    Preheat oven to 375.
  2. 2
    Combine all ingredients and pour in 9x13 dish.
  3. 3
    Bake 30-45 minutes.

Hey Internetnut

I think you might want to change the Name to OatmealNut!  I made this recipe this am and is was really yummy.   It did taste like a Oatmeal Cookie to me.  I put a splash of SF creamer  and some SF Maple Syrup.

I only made 1/4 of the recipe and that will make 4 servings for me.  I baked it in a 6" pie dish.

Does this stuff nuke well, and how is it cold?  It would be a good thing to take to work. I usually eat my breakfast once I get there.

Yeah I like oatmealNut! LOL! I've been wanting oatmeal alot for some reason. This does nuke good. I nuked mine today and splashed on some milk and it made it warm but soft. My future hubby has been eating it cold like it's going out of style. I had to tell him to save some for me. LOL. I think you could pack this in a bag and nuke it and eat it warm. It tasted great with and without sf maple syrup. Thanks for the creamer tip. Christine (internetnut)

Hi  I didn't do the nutrient facts...

here are the quantaties I used. 
1 1/2 tsp Oil

1/4 cup applesauce

3 TBsp splenda or other sweetner

1.5 cups regular oats

1 egg

1/2 tsp baking powder

1/4 tsp salt

1/4 tsp cinnamon

1/2 cup milk

I combined ingredients and put in a 6" pie or casserole dish.  I sprayed the baking dish with a a little PAM spray.

I think I might make this for an AM potluck at school next week. I was thinking of adding maple syrup into the mix before I bake it and adding raisins and nuts too. Do you think that would work? I don't have regular oats, only quick. I hope it will turn out OK.

I think the idea of using sf maple syrup, raisins and nuts sounds like a good idea. I was thinking about adding dried apples. This whole como sounds great! Thanks for the idea. I so think this would work. I'm not sure about the quick oats as it says regular oats. You could try it if your not telling anyone your bringing this in and if it turns out ok then you'd be fine. OK I tried it out this am on DH. I made a forth of the recipe. I didn't use the oil and forgot the salt. I added quick oars, SF maple syrup, pecans and raisins. Not sure on proportions because I just threw it all in without measuring. It came out great. It came out firm like a casserole. I put some in a bowl and put on some milk. I really liked it. It had cooled in the pan by the time DH woke up and it was just like cake. I put some in a bowl and nuked it and put on milk and DH hated it. He said he probably would have liked it like cake instead.

I think it is a go for the potluck on Tuesday. Thanks for the recipe.
