Recipes for cauliflour
1) Cauliflour side dish
Head cauliflour
2-3 cloves thin sliced garlic
Olive oil, or olive oil spray
Edited to add: I forgot the rosemary!!! Use either a couple stems rosemary, or a tablespoon dry rosemary, and sprinkle after you add the olive oil
Direction: Cut caulifour apart, discarding stump and hard stems. Place in a shallow baking dish. Scatter garlic slices over caulifour. Sprinkle olive oil evenly over dish, or use spray if you like, but spray generously. Salt and pepper to taste.
Bake at 450 for about 20-30 minutes, check at 20 minutes since ovens vary.
2) Baked chicken with cauliflour
Skinless breasts, thighs or legs, or a combination, enough to serve 4
Head cauliflour, cut apart with stump and tough stems discarded.
2 med-large onions, sliced thin
3-4 cloves chopped garlic
1 can whole tomatoes, low sugar
1 can tomato paste
2 tablespoons curry powder of your choice
1/2 teaspoon red pepper
1/2 teaspooc allspice
Directions: Place chicken in bottom of baking dish, deep enough for some sauce. Cover with cauliflour.
Put sliced onions on top. Break tomatoes apart into small peices, put on chicken along with juice.
Put tomato paste and 2 cans very ho****er in a bowl, add spices and stir well. Add salt and pepper to taste. Pour over chicken. Cover tightly with foil. Bake at 400 degrees for an hour, until chicken is done.
I add sliced potatoes to mine sometimes instead of cauliflour for variety, this add carbs, depending on how much potato you use. Without the potatoes, this is carb friendly.
3) Edja, A cauliflour patty
1 head cauliflour, cut up and boiled with salt until tender.
1 small onion minced
1 clove garlic , minced
1 egg, beaten ( use 2 if cauliflour is large)
1 tablespoon flour ( 2 if needed for a large head)
2 tablespoons canola oil, or olive oil ( I prefer olive oil)
Directions: Mash cauliflour with a fork, add onion, garlic,egg, flour, and salt and pepper to taste.
Heat oil to med-high heat. Form patties a little bigger than a cookie, and fairly flat. Fry on each side until golden brown, Drain on paper towels.
