Mock Alice Springs Chicken...delicious!

I loooovvvveee Outback Steakhouse so of course, I found a way to make my favorite meal from there cheaper and healthier!

1 boneless/skinless chicken  breast
2 slices turkey bacon
2 tbsp lite honey mustard dressing
+/- 1/4 cup mushrooms (canned works best for this)
+/- 1/4 cup 2% colby jack cheese
salt/pepper/garlic/etc

- Season chicken breast and bake chicken breast at 350 until done (no longer pink)
- While baking chicken cook up 2 slices of turkey bacon until crisp
- Remove chicken from oven and layer (in order) on top of the chicken breast - mushrooms, 1/2 of the honey mustard, bacon, and finally, cheese
- Bake until cheese has melted
- Remove from oven and drizzle last 1/2 of honey mustard dressing
- Enjoy!!  (Mmm...sounds so good...I'm going to have to make this soon)

I've never had the original, but your adaptation sounds delish!  Did you do a calorie or protein calculation?

Sure, it has about 300 calories (as long as you don't go overboard with the dressing and the cheese and your chicken breast is about 4 oz), 36 grams of protein, and 11 grams of fat.  It is pretty yummy...its on my list for next week!!

I too LOOOOVE the Outback and specifically the Alice Springs Chicken!! Thanks for posting this. By the way I think I've seen you in a Syracuse Support group once a few months ago. It was a Saturday morning at the Alliance church.

Hey, no problem!  I'm making it this week, can't wait!  Yes, that was me at the support group in Syracuse!  Good to see you here!  I only went to that group once, since then I've found a support group for just LapBand which fits my needs a little bit more.  Well, if you decide on this recipe I hope you like it!

Thanks for the recipe.  I've never been to Outback but I know lots of people that love their food so I tried this.  Altered it slightly by using fresh mushrooms and just straight up old cheddar and it was wonderful.  BF and kid loved it as well.  Will be a keeper recipe for sure.
