Low Fat Cheesecake Brownies

Here's a tasty brownie recipe that is low-fat and is also a good choice for diabetics (just 19 grams of carbohydrates in each brownie). Using applesauce instead of oil or butter and using egg whites instead of whole eggs reduces the fat content in these goodies.

This recipe also uses Neufchatel cheese. American neufchatel cheese is slightly lower in calories than regular cream cheese because of a lower milk fat content (about 23 percent). It also contains slightly more moisture.

 

Ingredients:
1 (19.5 oz.) package brownie mix
1/2 cup applesauce
3 egg whites, divided
1 tsp. vanilla extract
1/4 cup water
1 (8 oz.) package neufchatel cheese (1/3 less fat than regular cream cheese), softened
1/2 cup granulated sugar
1/4 cup all-purpose flour

 

Instructions:
Preheat oven to 350 degrees F/180 degrees C. Spray a 9 x 13-inch baking pan with non-stick cooking spray.

Mix together brownie mix, applesauce, 2 of the egg whites, vanilla extract and water. Pour into prepared baking pan.

Mix neufchatel cheese, sugar, flour and remaining egg white until well blended. Spoon over brownie batter. Cut through batter with knife several times for a marbled effect.

Bake in preheated oven for 28 to 30 minutes or until wooden toothpick inserted in center comes out with fudgy crumbs attached. Cool in pan on wire rack. When completely cooled, cut into 32 squares.

Makes 32 brownies.

1 1/3 cup Flour 4 ounce Nestles Choco Bake Pre-Melted Chocolate
1/4 teaspoon Baking Soda 2 Egg
1/4 teaspoon Salt 2 tablespoon Water
1 1/3 cup Splenda, for Baking 1 1/2 teaspoon Vanilla extract
1/2 cup Butter 1/2 cup Nuts

Instructions for Chocolate Brownies - Low Carb

Preheat oven to 350
Grease 9 x 13 baking pan

Combine flour, baking soda and salt in small bowl. In another bowl combine Splenda, butter, chocolate, eggs, water and vanilla extract, stir vigorously. Stir in flour mixture. Stir in nuts. Spread into prepared baking pan.

Bake for 18 to 20 minutes or until wooden pick in center comes out slightly sticky. Cool in pan on wire rack. Cut into about 2 inch squares. Yield 24 pieces.

Ingredients:

3/4 cup sugar

1/2 cup flour

1/2 tsp baking soda

2 egg whites, lightly beaten

1 tsp vanilla

2/3 cup unsweetened applesauce

1/4 cup unsweetened cocoa powder


Directions:

Preheat oven to 350°F. Spray a square 8 x 8-inch nonstick baking pan with cooking spray.

Combine the ingredients in a large mixing bowl, blend well. Pour batter into pan and bake in preheated oven 20 to 30 minutes until baked. To test if batter is done, insert a toothpick. If it comes out clean, brownies are done.

Remove from oven and let cool for 5 minutes in pan. Gently remove from pan; place on wire rack and when cool. Cut into eight squares.

Variations:

Can lightly sprinkle baked brownies with powdered sugar. Fresh cooked, peeled apple can be used instead of applesauce, if desired.

    Blend butter, applesauce, splenda, and vanilla. Add eggs, Flour, cocoa, protein powder, baking powder, salt and fold in nuts. Put into a greased 9x13 inch pan bake for 15-20 mins till tooth pick comes out clean).

    In a medium bowl, using an electric beater on medium speed, beat the butter, sugar, applesauce, egg, and vanilla. Slowly beat in the cocoa and flour. Pour the batter into the baking dish and top with the almonds.

Have more but the page froze. Here's one from Eggface. The other is from Rachael Ray's show. I plan to make them using Splenda in place of sugar. I haven't tried these. Hope these help! Christine (internetnut) 

Shelly's Chocolate Monkey Protein Brownies

                                                                                                                                                                                             1/3 cup peanut butter
2 ripe bananas, mashed (medium sized)
1 teaspoon vanilla extract
2 tablespoons torani sugar-free syrup (I used Sugar Free Vanilla)
2 tablespoons milk (I used Vanilla Soy Milk)
2 tablespoons sugar-free maple syrup
2 1/2 cups oatmeal, dry
2 scoops chocolate protein powder
2 tablespoons sugar-free instant chocolate pudding mix, dry
1/2 teaspoon cinnamon
1/3 cup almond flour
 

Directions

    In a large bowl, mash bananas with a for****il smooth.

    Add peanut butter, soy milk, vanilla, syrup and maple syrup and mix well.

    Add remaining ingredients and stir until well combined.

    Press into a parchment paper lined pyrex dish and bake for 40-45 minutes at 350 degrees.

    Rinse beans thoroughly and shake off any excess water. Blend beans and one egg in a food processor until the mixture is completely smooth.

    Melt the butter in a mixing bowl in the microwave. To the butter, add bean and egg mixture, the remaining two eggs, vanilla and baby prunes, and mix thoroughly. Add sugar, flour and cocoa to the bowl; stir to combine.

OK normally I have my own recipe for LOW carb stuff, but this should get you where you want to be for low carb brownies....  this is not my recipe and I don't know who's it is, so I wish I could give the credit!

Low Carb Torte:

1 pound sugar free chocolate, cut up
1 pound butter
1 cup whipping cream
1 cup splenda
9 eggs
4 teaspoons vanilla

Low Carb Topping:

1 cup whipping cream
12 ounces of sugar free chocolate


Grease bottom and sides of a 10-inch spring form pan and line a sheet pan with foil; set both aside. In a large heavy saucepan combine one pound of sugar free chocolate, the butter, 1 cup whipping cream and splenda. Cook and stir over medium-low heat until chocolate and butter are melted; remove from heat.

In a large bowl whisk eggs and vanilla together. Slowly stir half of the chocolate mixture into egg mixture. Return egg mixture to remaining low carb chocolate mixture, stirring until combined. Pour batter into prepared pan. Place pan on the lined baking sheet; place on oven rack.

Bake in a 350 degree oven for 45 to 50 minutes or until evenly puffed and a knife inserted near center comes out clean. Remove from oven and cool thoroughly on a wire rack. Chill for several hours or until low carb torte is firm. Use a small metal spatula or knife to loosen torte from sides of pan; remove sides of pan.

For the topping: In a small saucepan heat the 1 cup of whipping cream to just boiling. Place 12 ounces of sugar free chocolate in a medium bowl. Add hot whipping cream and stir until chocolate is melted. Cool to room temperature. Spread over top of the low carb dessert, allowing some to drip down the sides. Cover and chill until set.

Let this delicious low carb torte dessert stand at room temperature for 30 minutes before slicing. Enjoy!!

This is from the Hungry Girl's website; it can also be made in a sheet, but you will have to adjust baking time, I don't remember to what....they are SUPER filling, you don't need a whole one, better to make the minis!

This super-simple 2-ingredient recipe is a Weigh****chers Fave!

1 box devil’s food cake mix
1 can solid pack pumpkin (15 oz.)

Directions:
Mix the two ingredients together. Don't add anything else that may be mentioned on the box, such as eggs, oil, or water. The mixture will be very thick and you will be tempted to add in other things to make the batter smoother. DO NOT DO THIS AS IT WILL RUIN EVERYTHING! Place batter into muffin tins (or mini muffin tins) lined with paper, or sprayed with non-stick spray. Bake at 400 degrees for 20 minutes. Makes 12 regular or 36 mini muffins.
