Savory Stilton Blue Cheese Cheesecake (great for entertaining!)

Serve these at a party along with a mixed green salad and watch the amazement of your guests.  Once you remove them from their cup-cake forms, you should actually cut them in half and slice them into half moons so you can let more people eat them (up to 24 cut this way).  These are RICH….they are strong and savory, not to mention, REALLY satisfying.  Thanksgiving and Christmas is coming up and these are perfect to bring along to those events who aren’t thinking of helping us low carb people survive the dreaded parties!  I know it’s important for those of you who love to attend these things…so feed thyself and love the food you bring….

I hope you can’t call this a “boring” low carb meal….

Ingredients:

½ pound Stilton blue cheese, room temperature (If you can't find Stilton, just use a high quality blue cheese, but NOT gorgonzola since it's too strong)

¼ teaspoon salt

¼ teaspoon freshly ground black pepper

5 dashes Frank’s Durkee Red Hot pepper sauce (it’s not all that hot)

1/3 cup almond meal

1 shallot, finely chopped, saute in butter

24 ounces cream cheese, softened

5 eggs

1/3 cup heavy cream

3/4 pound bacon, diced small, fry this crunchy

1/4 cup freshly grated parmesan cheese

 

Preparation:

Using an electric mixer or a food processor, blend together the blue cheese, cream cheese, eggs, and cream until almost smooth.

Add the salt, pepper, and Frank’s Durkee Red Hot Sauce and mix thoroughly.

By hand, fold in the shallots and bacon.

Generously butter the wells of a  12-cup muffin tin.

In a separate small bowl, mix the almond meal and parmesan cheese.

Divide the filling evenly among the wells.

Bake at 350 degrees for about 20 minutes, turn the oven off, and leave tins undisturbed inside for another 30 minutes.

Cool 5 to 10 minutes and gently remove from the tin. Serve slightly warm or cool completely and store, tightly sealed, in the refrigerator for several days. If refrigerated, warm gently for 20 to 30 seconds in the microwave a before serving.

 

Serves 12 to whatever depending on how you slice them…

??? grams of carbs per serving, lets just say it’s REALLY low (less than 2 grams per serving-ish)…

Hi, Welcome back!!
This will be great, my whole family likes Blue Cheese! Is "Stilton" a common brand? If I can't find it, is there another recomendation?

According to my search engine...You can use any crumbled blue veined cheese. I was wondering the same thing because I doubt we have it here in Okla. I just typed in Stilton Blue Cheese CheeseCake. That is what it said about it.

No, definitely cook the bacon and saute the shallots!  I gotta modify my recipe!

it doesn't have to be stilton, just make sure it's a high quality cheese....    Things in my recipes are always flexible!
