I want to learn to use tofu and in need of recipes that you think are great.  Any tips on how to use, select, store etc. would be awesome.  Thanks for sharing

I am not a big fan of tofu but had some recently that I liked. It was baked tofu. It was firm tofu cut into 1/2 inch squares and then marinated for an hour in terriaki sauce. It was then baked until browned a bit. The tofu tasted just like the sauce. You could mix that with any veggies and have a nice meal.

I like it in chicken soup.  Hubby has the chicken, I have the tofu.

2 chicken breasts
a pot of water
black pepper
sliced carrot
1/4 onion
1 bay leaf
1/2 package firm tofu, drained, pressed between paper towels to dry and cubed

Boil everything but the tofu for 2 hours until water is about half.
(Sometimes I take the easy way and use Sue Kitchen's chicken broth, add the carrots, onion, bay leaf and black pepper.  Simmer til chicken is done)

Dry fry tofu and add to soup.  Simmer 10 - 15 minutes.

It goes down real easy.

Lately Tofu is the only thing that works for me when it comes to eating protein. My favorite is copping up some zucchini, and mushrooms, cook those until almost tender (in a pan). then i use firm tofu and cut about two 1/4 inch slices and cut those into cubes. throw those into the pan for a few mins, and then add some low sodium soy sauce or some low sodium teriyaki sauce. Cook that for a few mins.

Its really yummy!

I like tofu and cook with it regularily.  Another option for tofu is using silken to****oft).  Soft tofu can be slipped into almost anything!  I have put silken tofu in spag sauces, chili, soups, puddings and yes even smoothies!  My kids eat it and never know it's in there!

There was a local woman here that had lost alot of weight.  One of the things she fixed was tuna salad, but instead of mayo, she used the soft tofu, with whatever seasonings you choose.  Always thought that sounded interesting, but have to admit never tried it.  I always forget about tofu when I go to the store, but would like to incorporate it in my new eating plan.  Michael

My family fav is Pork Tofu.

1 Block firm Tofu
1 pack Chop Suey Mix (bean sprouts and cabbage)
1 lb ground pork
2 T Soy Sauce
1t White pepper
Salt to taste
1 block Kamaboko (Fish Cake) Optional
1/2 cup chicken broth or water

1.  Brown ground pork
2. Add in all ingredience and bring to boil.
3.  Simmer for 15 minutes.

For the rest of the family they can eat over rice.  This is a great recipe that is high in protein.  I make this every week and the family loves it.

Enjoy.
