Enchilada Casserole

I make mine lasagna style.  It's embarrassingly easy, but I get so many compliments whenever I make it.

Ingredients:

3/4 pound lean hamburger (I have 10/90)

1/2 can jalapeno refried beans

1 can of enchilada sauce

3 soft taco flour tortillas

1/2 can of olives (if you like them)

1 cup of 2% sharp shredded cheese

I use this dish  >>  The one on the left

French White Corningware



Brown the hamburger & drain any fat.
Then add the sauce & let it simmer while you get the next steps done.
Lightly brown both sides of the tortillas on a hot dry pan. 
Pre heat the beans in the microwave, it makes spreading them much easier.
Divide the the beans into thirds.
Spread 1/3 of the beans on each tortilla.

To assemble:

Put 1/4 of the meat/sauce on the bottom of the dish. 
Put 1 bean covered tortilla next.
Spread 1/3 of the olives.
Repeat
Meat/sauce
Tortilla
olives
Meat/Sauce
tortilla
olives
Meat sauce
Cover in cheese

Bake at 350º for about 20 minutes, or until bubbly.

The recipe makes 4 nice sized portions

Calories: 525  Fat: 26g  Carbs: 40g  Protein: 31g  Fiber: 7g

This would also be great with shredded beef or pork and even chicken! Thanks for posting!

I leave it uncovered.   Right now I have a little make shift kitchen, while my friend & her children are staying at my house.  So, honestly, I microwave it for 5 minutes. (Remember that everything is fully cooked at this point, so I'm just heating it through.)  It still turns out delicious!!

It looks great smilin, try lowering the carb and calorie count by using corn tortillas instead of flour.

That is a great idea!  I tried making my chicken enchilada casserole last week with corn tortillas & it was great.  I'll bet that would be good with the beef ones too!

I made this last night and I used the Corn Tostada tortillas ( the real crunchy ones, they are actuall better than the regular corn totillas in nutritional value and taste)

it was awesome! My husband even loved it, thanks so much for sharing the recipe!!!

Oh gosh, made this for the family today and they looooooved it!!!!!!

I did it with tostada shells. And 1 lb of ground beef, and 2 cans of sauce. I also did it in an oblong baking dish (the other one pictured in your post, actually!) and used 6 shells (they overlapped slightly in the middle, but it was fine!) and a whole can of FF refried beans. (Hubby is a HUGE eater... all 150 lbs of him.  lol) Anyway... followed the same basic directions, with those few changes. Hubby also made a can of black beans and scooped a spoonful on top of each serving. It was YUMMY!! A new favorite at my house, I think!
