Any and all shrimp recipes - but the simpler the better... I don't have much time.

I wish there were a search link for certain recipes...and maybe there is and I don't know about it.

this one is simple and tasty

Shrimp-Artichoke Frittata Ingredients
    • 4 oz. fresh or frozen shrimp in shells, peeled and deveined
    • 1/2 of a 9 oz. pkg. of frozen artichoke hearts
    • 6 eggs
    • 2 tbls. heavy cream
    • 2 tbls. water
    • 1/4 c. sliced green onions
    • 1/8 tsp. garlic powder
    • 1/8 tsp. pepper
    • 3 tbls. finely shredded Parmesan cheese

Instructions   1.Thaw shrimp, if frozen. Halve shrimp lengthwise. Cook artichokes according to package directions. Drain; cut artichoke hearts into quarters and set aside. 2.In a bowl beat together eggs, cream, water, green onion, garlic powder, and pepper. Set aside 3.Spray an unheated large nonstick skillet with nonstick coating. Heat skillet until a drop of water sizzles. Cook and stir shrimp afor 1-3 minutes until pink and opaque. 4.Pour in the egg mix. Cook over medium-low heat. As the egg mixture sets, run a spatula around the edge of the skillet, lifting the egg mixture to allow uncookde portion to flow underneath. Continue cooking and lifting edges until mixture is almost set (surface will be moist).

Remove the skillet from teh heat; distrubute artichoke pieces evenly over the top. Sprinkle with the Parmesan cheese. Cover and allow to stand about 4 minutes or until top is set. Cut into wedges. Makes 4 main dish servings or use as an
appetizer or for WLS people

Helga - This sounds good - I have frozen, cooked shrimp without tails, and artichoke hearts that are canned.  So I am halfway there!  6 eggs sounds like a lot, so I might decrease that amount.

Thanks!

I don't know about the Desert Pepper Pineapple salsa - did you make it or is it store-bought??

And I love pineapple with anything...
Thanks,

Store bought.  I got it at our local market.  Also available onlike:
http://www.gourmettrading.com/desert_pepper/index.html

I also like Arriba Berry Mango Salsa.
http://www.foodlocker.com/125004.html

Both are within the carb limits for WLS.

Enjoy,

I am wondering if the salsa that has pineapple or mango in it would work?  I find it at Walmat - made by Newman's Own.

Thanks for the links

It should, just check the carb count and calories and abide by your doctor's recommendation.
I have used Newman's Own regular salsa also, I just like the fruit ones better.

I just checked online:
Newman's Own Mango Salsa:
2 Tbl
20 calories
5g crbs

compared to Arriba Berry Mango Salsa,
2 Tbl
10 calories
2g carbs

Newman's Own Pineapple
2 Tbl
15 calories
3g carbs

Desert Pepper Pineapple
2 Tbl
15 calories
4g carbs

Your welcome, I thought it might be helpful to see the labels for matching in the store.

I knew to do that, but just hadn't - I was wishing for a way to type in a search for this site....  Thanks for the link, though, I glanced over some and like the ones with nutritional value best... takes the work out of guessing!
