Protein "Rice" Pudding aka "Arroz" con Leche Recipe Inside

Hi everyone!!

Yesturday I was inspired and decided to become a mad scientist in the kitchen. I came up with the yummiest "arroz" con leche ("rice" pudding) ever. I put quotations in arroz ('rice") because it really isn't rice, it's quinoa. So it's super healthy and protein packed. It's perfect for anyone on a diet, or just someone who is looking for a different desert. but ssshh don't tell anyone else it's healthy. lol

To the "mighty Aphrodite", this sounds awesome, i've been thinking of ways to twist it to different flavors and stuff, but actually it looks great all on it's own....

Thanks so much for posting this recipe since rice pudding is my very favorite dessert. I am going to try this too. How much protein does it have per serving?

I estimated that a portion like the picture has about 15-17 grams of protein. gl and let me know how it turns out.

I've never heard of Quinoa. Is it sold by the rice?

It is sometimes sold by the rice and grains, but you will most likely find it in the health food section. If you have a whole foods or a organic/health supermarket in your area, then you will defiantly be able to find it there.

I make "rice" pudding using cottage cheese.

Rice Pudding

1 pk sf instant vanilla pudding (make according to directions on box, adding cinnamon)
1 tsp cinnamon
1 small box of raisins
1 lg container small curd cottage cheese

Add cinnamon to dry pudding mix, make according to directions on box. Add raisins to pudding mix and place in fridg to set. Once puddign has set, fold in cottage cheese. Return to fridg for 30 minutes to 1 hour prior to serving. This allows flavors to blend and raisins to become soft. You can not tell this is cottage cheese. It is really yummy!
