Scrumptious Burger

So last night my boyfriend was dying to have just a nice hamburger for dinner. So I took out the hamburger to make it for him. I also took out some turkey burger for myself and made the yummiest burger. And it was so simple.

I use the George Foreman for cooking my turkey burgers. So I mixed cayenne pepper, black pepper, garlic and onion in with my turkey burger and made two small slider sized burgers. Then I took a low carb wrap, folded it in half and cut it down the middle. Last week I made a roasted red pepper mayo, so I spread some of this on both sides of the wrap. Then I placed the sliders onto one side of the wrap, layered it with some pepperjack cheese, sauteed mushrooms and some lettuce. Placed the other side of the wrap on top and placed it on the George Forman, pressed down on it for about 1 minute (just long enough to crisp the wrap and melt the cheese.) It was sooo yummy.

Many of you may have seen a version of this at Applebees - I believe they call it the quesadilla burger.

That picture is from the Applebee's site. I wish I could say mine looked that good - but it didn't. However, it didn't look too bad either!

For the roasted red pepper mayo - all I did was take a few roasted red peppers (out of the jar, not marinated) - ground it up in my handy dandy Black and Decker chopper (any chopper will do) - mixed it with Hellman's Light Mayo. Then I added a few drops of Frank's Red Hot (for a little kick) and some fresh ground pepper - mixed together and let it set for about 2 days (otherwise it's a little runny from the juices of the pepper.) Very simple.
