Eastern North Carolina Style Barbeque
Made with Chicken instead of pork (no one can tell the difference!)
Bake a couple of whole chickens and cool. Debone and chop meat until it is medium/fine.
Sauce
1 cup apple cider vinegar
2 T butter
1-2 Teas Crushed Red Pepper (adjust to your taste)
Bring to a hard boil. Pour over chicken.
Serve with coleslaw on an plate or a bun.
Easy, simple and freezes well! If you don't like vinegar based bbq, use your own sauce!

Oh my gosh....VERA! I can still remember BBQ.....oh how I miss real BBQ....I don't have any real bbq places here in the islands....everything is "jerked" seasoned...which IS really good, but it's not the same...
I was raised on Kansas City Style BBQ (lots of brown sugar and tomato based sauces) and tons of Memphis (dry rubbed pork) ....either way... I miss it... I miss that little rib joint in the middle of a downtown alley in memphis called Rendezvouz....so wonderful....
My mouth will be salivating over the next hour...hehe..
