I read online that someone used FF greek yogurt instead of mayo in their chicken salad recipe.  (It made it higher in protein with no fat)  The thought was appealing to me, but they must have added some extra spices &/or garlic or some combination of things to make it taste good.   Any ideas??

Hey girl, I've got LOTS of ideas to make it more "Greek".

Common Greek spices are as follows:    oregano ,mint, garlic, onion, dill, salt, and bay laurel leaves, basil, thyme, nutmeg, cinnamon, and fennel seeds.  The greek “swet flavors have been used in weird ways…like for chili…the Greeks like nutmeg, cinnamon, and a hint of mint in it and then it’s added to a savory base of chili to make it sweeter….  Then there is savory Greek food…so it has an awesome punch but if you don’****ch the measurements exactly then it can turn out to be a nightmare on your tongue!  Use sparingly…..hehe

 

Greek desserts commonly have honey and some type of nuts in them.

The Greeks love to use these to enhance flavors as well…….Lamb, olives, pork, yogurt, grape leaves, lemons, lentils and a variety of cheeses besides the commonly known feta like: Feta, Kasseri, Kefalotyri, Graviera, Anthotyros, Manouri, Metsovone and Mizithra.  All are nice hearty, savory cheeses.

Me? a wealth of knowledge?  no....  I'm just a simple hedonist that loves food that is low carb but still give me the satisfaction....hehe...

I'm a man...so yes, yes...I know can't live with us, can't live without us... HA!

Hi here is a recipe its pretty good! half mayo half fage.
1 1/2 cups Cooked Chicken, cubed
1 Tablespoon Chutney (I used Cranberry Apple)
1 stalk Celery, chopped
1/4 cup Mayonnaise
1/4 cup Fage Greek Yogurt
1 Green Onion, diced
dash of Kosher Salt
a few twists of Black Pepper
2 Tablespoons Dried Cranberries (or Golden Raisins or Chopped Dried Apricots)
1/4 cup Pecans, chopped
