Muffin in a minute

1/4 Cup Flaxseed Meal

1/2 teaspoon Baking Powder

1/2 teaspoon cinnamon

1 tablespoon Splenda (optional)

1 egg


Mix everything together in a coffee cup. Cook for one minute in the microwave. Turn the cup upside down to take the muffin out. If it looks wet, let it sit for a minute or so. I have these for breakfast. You can add blueberries, or try other additions. Some people add a tablespoon of cream cheese before cooking.

I meant to tell you how anxious I am to try these. I know many people just copy them down and forget to even say thank you for helping us with more variety! I was so afraid I would miss muffins and the like...now I am set!!!  Thank you!

I love these, I used 1/4 cup oatmeal whizzed in the blender for a bit, and sometimes add a glop of mascarpone cheese.
They are great, and if they seem dry, split them and spread with SF jelly or jam

I just made one and it was delicious.  I only used 1 tsp of splenda and even that was a bit too sweet for me so will cut it down even more the next time.  Added a handful of blueberries and it was delish.  Thanks, will be making these again.
