LOW Carb: Saltimbocca chicken- So tasty....so delish...

Saltimbocca Chicken

 

Ingredients:

 ¼ cup flax meal (no carbs in this stuff)

2 eggs

Coarse salt and ground pepper

4 fresh whole sage leaves, plus 4 minced leaves

4 (6 to 8 ounces each) chicken cutlets

4 slices (3 ounces) thinly-sliced prosciutto, you can substitute bacon for this, but it’s harder to prepare

4 teaspoons olive oil

¾ cup dry white wine

1/3 cup reduced-sodium canned chicken broth

1 tablespoon cold butter

 

Preparation:

In a shallow bowl, stir together flax meal, 1/2 teaspoon salt and 1/4 teaspoon pepper. Add dash of cayenne red pepper. Set aside.

Lay one sage leaf lengthwise on each cutlet, then wrap a prosciutto slice around middle of each cutlet, encasing sage. Flatten with the palm of your hand to help prosciutto adhere to the chicken. Dredge cutlets egg first, then in seasoned flaxmeal; tap off excess.

In a large nonstick skillet, heat 2 teaspoons oil over medium-high heat. Cook 2 cutlets until golden-brown and cooked through, 3 to 4 minutes per side. Remove cutlets and keep warm. Repeat with remaining 2 teaspoons oil and 2 cutlets.

Add wine and broth to skillet; cook over high heat until reduced by three-quarters, about 2 minutes. Remove from heat; let cool 1 minute. Add butter and minced sage; stir until butter is melted, about 30 seconds. Spoon sauce over cutlets; serve immediately.

Makes 4 servings, with only  8.5 grams of carbs per serving

OK, I LOVE this idea-thanks so much for posting it. I haven't tried flax meal as an alternative to breading on cutlets, but I definitely will now! Last night I made low-carb stuffed peppers, and I used a mixture of cream cheese and flax meal as a binder and it worked great. I don't know what I'd do without the flax!

On Cooks.com they use swiss chees in this and on the food network site, they use provolone in the roll....I think the Food.tv even added spinich.... Any of these would be a great addition...but great just as this reads here...

Lisa, you really saved me on this....  I was reading your note about a binder and the I re-read the recipe and FORGOT to add the part about dredging in egg before the flax meal!  So hey, thanks for saving me!  Was glad to see your smiling face responding!
