LOW Carb: Thai Basil Chicken

Thai Basil Chicken

Ingredients: 

1/2 pound of chicken, (deboned), minced,  or cut into tiny pieces if you prefer

Small bunch of Thai holy basil ,don’t be shy with this stuff . Normal sweet basil can also be used, but this changes the taste.

5-6  small HOT chili peppers, minced (other peppers can also be used, but again, this will change the flavor)

1 tablespoon granulated splenda

1 tablespoon minced garlic

3 tablespoons fish sauce (pick this up from Asian grocery)

1 tablespoon vegetable oil

 

Directions:

 

Mince garlic and chili pepper

Clean and pick basil leaves from their stem.

Fry the garlic and chili pepper in oil over high heat.

When garlic starts to turn a golden  brown, drop the chicken in, stirring constantly. Keep stirring until all the juice from the meat evaporates.

Add the rest of the ingredients.

Saute everything quickly and under high heat, remove from the stovetop.

Hey, were you peeking in my fridge?  I just bought some of that same basil and was wondering what to make!  I love, love, love spicy chicken with basil so this recipe i will make tomorrow night.

I truly love this stuff....  it's really called "Gra Pow" chicken and it's one of my very favorites, but I don't have a grinder on the islan for chicken...so I've gotta manually do it...  and it's sooooo slow and time consuming..but so worth it!.  So glad this could help ya out!

This sounds great, T!  I'll probably make it with firm tofu...still having chicken issues.

I too am having chicken issues....in fact, I'm having meat issues in general....everything looks and smells so good, but a small bite of meat just tends to make me sick...so I'm living off flax cereal...(which tastes wonderiful and i'm not complaining...lol).  it would just be nice to eat more of my own food...haha!
