LOW Carb: Chicken Lettuce Wraps like PF Changs

Lettuce Wraps like PF Chang’s
Ingredients:
2 pounds ground chicken
4 tablespoons of cooking oil
2 cloves garlic, minced
2 green onions, thinly sliced
2 small dried chilies
1 teaspoon freshly grated ginger
2 teaspoons dry sherry
2 teaspoons water
2 teaspoons Kikkoman soy sauce
8 oz can bamboo shoots, drained & diced
8 oz can water chestnuts, drained & diced
salt and freshly ground pepper
Package of dried shiitake mushrooms - roughly 8-12 portions
Iceberg lettuce “cups” , they make other forms of lettuce like bibb lettuce of butter lettuce, but it’s what you want…
Sauce:
1 tablespoon hoisin sauce
1 tablespoon Kikkoman soy sauce
1 tablespoon dry sherry
2 tablespoons oyster sauce
2 tablespoons water
1 teaspoon sesame oil
3 packets of Splenda, add more if you like (but only add to taste)
Preparation:
Start to cook the chicken, cook for about 5 minutes
While the chicken is cooking, mix all of the ingredients for the sauce in a small saucepan, warm under medium heat (do not boil!) one warm, sit to the side.
Add the mushrooms, bamboo shoots, water chestnuts, and chiles and the rest of the ingredients to the chicken. Cook for one minute.
Add the sauce mixture to the chicken. If mixture looks too thick, add more water, cook under medium heat for about 5 minutes. Let sauce thicken, and serve while hot!
Make around 10-12 portions for an appetizer and the carb count is about 7.5 per serving. Sherry must be cooked well to pull out alcohol carbs!
