real chili anyone?

You Texans know what I'm talking about right?  I once had this chili and it had no beans, just slow simmered sirloin and sauce and it was heaven.  I figure it has to be pretty low carb too.
Anyone have a recipe like that?

We just had a big chili festival down here last mnth and I tried about 30 different chili recipes.... there were 3 that I loved and one of them was just like you describe.  I'll ask the guy if he will give up the recipe.  It as really delish!

There were only 2 more that I tasted that were better than normal chili and I've found the ingredient list to only one of them...  I'm working on the others...hehe...

Here is one that I found on a low carb recipe site and I like it. I am waiting for T to post his though.

No-Bean Chili
Low Carbohydrate Recipe

Ingredients:
2 tablespoons olive oil
Three garlic cloves, chopped
Two onions, chopped
One green bell peppers, chopped
3 pounds beef
1 teaspoon ground cumin
1 teaspoon ground oregano
3 tablespoons chili powder
Ten tomatoes, peeled and chopped
Two jalapeno peppers, optional
One can beer

 

Directions:
Heat oil in a large heavy skillet. Add garlic, onions and

Add beef and lightly brown on all surfaces. Drain off some of the fat if a lot has accumulated. Lean beef trimmed of all fat should not have an excess amount, however.

Add remaining ingredients and

green pepper. Saute until soft, about five to seven minutes. simmer for one hour or slightly longer. Put a cover on skillet during cooking time, and slightly tilt it so steam can escape. Check often and stir to prevent sticking. Skim off fat as it rises. Best if allowed to sit, tightly covered, for an hour after cooking is complete.

 

Recipe makes six servings.

ok gals..this is the real deal!  I made a batch tonight and it tasted so good...  i wasn't able to get them to tell me the recipe, but I had another taste and this is my closest rendition to what I tasted.

Ingredients:

 

2 pounds ground chuck or ground sirloin

1 medium shallot, minced
1 small white onion, minced

1 tablespoon shortening

1 tablespoon chili powder

1 teaspoon paprika

1 teaspoon black pepper, coarsely ground

1 teaspoon garlic powder

¼ teaspoon nutmeg

1 teaspoon cumin powder

1 teaspoon allspice

1 teaspoon cinnamon

1 teaspoon basil, dried

1/2 teaspoon oregano, dried

Salt to taste

 

 

Preparation:

 

Ok this is gonna be weird for a lot of people, but DO NOT BROWN the meat first!

 

To get the right consistency, cover the meat with water and soak, in the

fridge, for about 30 minutes.

Take a fork and break up any remaining chunks.

Drain the water and go on to browning.

You will have some water

while browning but it will slowly steam off.

Brown beef, shallots, onion, and shortening.

Add remaining ingredients.


Simmer for 3 hours. Stir often!!!!

If you need to add more water, that’s cool…(i had to add water)…if you want to add beans…that’s cool too but the carbs will jump up quite a bit!

 

(without the beans it remains under 5 grams/serving)

 

This recipe yields 4-5 servings.

For Texas chili purists, there are no tomatoes, no beans, really no veggies at all.  its all about the meat and the spice.
