Need a great salsa recipe!!!

Does anyone have a favorite recipe for salsa/chips - doesn't have to be screaming hot, doesn't have to be mainstream - but must be tastey!!  Thanks for your help!

I like this recipe from "chuy's" down in deep Texas....it's a terrific mexican place that also has a terrific ranch dip/sauce for things....it says to heat it up...but that's optional.....  This isn't my recipe, but I do use it!

This is a green salsa BUT if you want the red, then just replace the green tomatillos with 1 pound of fresh, ripe tomatoes, and decrease the amount of water by about 30 ounces!

2 Quarts 50 min 20 min prep 
1/2 lb fresh tomatillos, husked and chopped
1/2 lb serrano chilies, seeded and chopped
1 lb sandia green chilies, roasted,seeded &,chopped
3 cloves garlic, chopped
1 medium onion, diced 
64 oz water
2 tablespoons salt
3 tablespoons lime juice, fresh squeezed

Put all ingredients, except salt and lime juice, in a large kettle and bring to a light boil.
Cook for 30 minutes.
Strain liquid into a large bowl.
Place solid ingredients in a blender.
Add 1/2 of the strained liquid (about 3 cups) and blend until smooth.
You may have to do this in batches.
Add the lime juice and salt and blend for 30 seconds.
Chill and serve.

Since I'm in the Caribbean, this one is nice too....  it's not only flavorful, but great looking and smells wonderful.

2 Small mangos (as ripe as possible), diced and mashed
1/4 red onion, diced fine 
Large tomatos, chopped fine 
1/2 fresh jalapeno pepper (large), diced fine 
1/3 cup chopped cilantro (fresh) 
1 1/2 tsp. ground cardamon 
1 1/2 tsp. ground coriander 
1 tsp. ground cayenne pepper 
Lime juice to taste Combine mangos, onion, tomatos and jalapeno pepper. 
Add cardamon, coriander, red pepper, (2) strawberries, yes I said strawberries..and lime juice. Mix well. Refrigerate for one hour prior to serving. Just before serving mix in cilantro

Hi,
We make a very easy salsa recipe that you can whip up in no time because you will probably have most of this in a pantry....I am all about easy!! I have also used this as a great tomato soup by adding water and heating it.....

1 can diced tomatoes
1 can tomato sauce
1 can Rotel original
1/2 cup chopped onion
Then add garlic salt and salt and pepper to taste.

You can use mild rotel or the original....You can also add dried crushed red peppers to give it more heat! I just like it as is. Other things I have added if I have them on hand, are 1/4c. chopped celery or 1/4 c. chopped green peppers. All of this just depends on taste and IF I have it....The above recipe is just the basic salsa and is fine as is.
