LOW Carb: T's Tortilla Soup with Chicken.....yep low carb!

Low carb tortilla chicken soup doesn't have to have tortillas in it!  That's right!  I said it...  this is deliious without it AND you can add some tortilla chips for the rest of the family who doesn't understand "low carb living".  This is a BIG recipe..it yields about 10 portions and is truly low carb!  You can make other things with the base of this soup.  If you don't need as much, then cut it back.  people tend to ask for seconds!  Hope you like it!  Carbs are about 4 grams per serving!

T’s Tortilla Soup with Chicken

Ingredients:

4 ounces butter

1 teaspoon arrowroot

64 ounces high quality chicken broth, it's good to have herb infused broth here!
1 cup salsa
10 ounces shredded Cheddar jack cheese
10 ounces cooked, cubed chicken
1 and 1/4  cups heavy cream
1 teaspoon paprika
1 teaspoon cumin
1 teaspoon ground coriander (optional)
Dash of cayenne

Side items- Hold for garnish:

4  ounces Guacamole
8 ounces of grated or chopped pepperjack cheese

4 ounces of sourcream

2 ounces of cilantro

 

Preparation:

Gently melt butter then add one teaspoon arrowroot, cook for about 2 minutes over low heat stirring constantly.

Add hot chicken broth slowly. Add salsa, chicken, and cream. Simmer for 15 minutes stirring frequently. Add a hint of black pepper, add spices, a dash of cayenne, and salt to taste . Remove from heat and whisk in the shredded cheese.

Garnish with the guacamole, shredded cheese, cilantro, and sour cream if desired.

Now hold on.....I've suggested on the main forum that T and I do a house swap, say in February?!  T could spend time skiing and enjoying the Vermont Winter Wonderland, while me & my family  (or maybe just me) could enjoy the catamaran and the tropical paradise....

Sounds like a fair trade, don't you think?

Heidi, I already asked him to come to my house and I am still waiting because he hasn't arrived here yet. He can come to your house when I am done with him here~but don't hold your breath since it may take a LONG time!

It seems you are very popular with the ladies!  Where do you get these recipes or are you the one who creates them with your brilliant mind? My son is also very creative when it comes to cooking. I am now learning to eat healthier and to cook totally different than what I learned as a young woman. In my southern family we grew up eating greasy fried food. Mom use to keep bacon grease in a cup to cook everything in- including veggies. Homemade biscuits and cobblers adorned my grandmothers table more than once a week. I didnt cook that bad but I did not take my nutrition serious. I decided before my surgery to eliminate red meat and no more fried foods for me. I so appreciate all the recipes on here and your contribution. DonitaB

Donita,  I'm a fortunate kinda guy!  I actually comeup with most all of my own recipes.  If I don't I always try to give credit to the person that gave it to me.  I too am a "southerner"...so I was raised not very far from New Orleans, so food has always been a part of my life!  ahhhhh the carbs.....lol...  I'm sure I was trained from birth to enjoy carbs more than I should....

But my tongue knows what it likes and I'm very lucky that i can put together a recipe on the fly with a limited number of ingredients and just make them work.  I love your comments....  I lov the fact that more people are coming to the recipe forum...  so tll everyone to come check out the great stuff that a lot of people are posting in order to help our army of "little bellies" stay healthy and happy!

i'm trying to get people to post invitations in their "home forums" to come check it out.  It seems to be working since nearly all of my recipes have a ton of hits and I know others who are doing a great job posting great recipes too!
