LOW Carb: T's Whiskey cream with mushrooms -for steak, chicken, shrimp, grilled...
I won a prize for this one...so give it a whirl...this fits everyone's needs except for vegetarians.... unless you grill eggplant or something...then it could fit you too! Some of you will ask how this can be low carb if it has whiskey in it...well the alcohol leaves the dish during the cooking process
T's Whiskey cream with mushrooms- Steak, Chicken, Grilled Eggplant or Shrimp
Ingredients:
1 small shallot, finely chopped
1 clove garlic, minced
1 ounce basil
2 ounces extra sharp Colby or Cheddar cheese, shredded
1 ounce butter
2/3 cup heavy cream
2 tablespoons Jack Daniel’s whisky
1 1/4cup diced mushroom (choose a high quality mushroom)
salt and pepper
(this yields about 4 portions)
Preparation:
Cook your meat as you would normally prepare them (no salt and pepper necessary on meat!)
Heat the butter in a small skillet, add shallots, garlic, and basil (don’t burn this, just sauté for about a minute) under medium heat.
Add Jack Daniel’s slowly, let simmer for about one minute, gently add crème, always stirring under medium heat. Do not allow to boil. This should be a thick mixture, enough to allow it to rest on top of the meat without it running all over the place. (if you need, you can add a dash of arrowroot to thicken)
Remove from heat, let it set for about 5 minutes
Stir and spoon over the meat, (while meat is still in a cooking dish) add cheese, put under broiler until just melted and turning brown…
Serve immediately….
Wait for the compliments to come your way…. If they don’t then I would force them to sleep elsewhere… and do their own damn laundry….hehe…
