Low carb meatloaf? How do you make it soft?
I am not a traditional cook. When I make meatloaf I will use meat, 1 can of diced tomatoes (regular or flavored), 1 egg, seasonings, onion, bell pepper, and some type of bread (slice of whole wheat or breadcrumbs). There are times when I have not even put in any type of breadcrumb, it depends on how dry the meat feels when I am mixing it. I then make it into either a loaf or several mini loaves. I don't have dry meatloaf though

My mother makes the best meatloaf in the world (maybe I'm biased, but I love it) - her secret recipe (which isn't so secret anymore) is using Lipton Beefy Onion Soup mix. Much like Cowboys pot roast recipe - you just dump the soup mix into the mixture dry. She also uses crumbled crackers and an egg for the binders - the crackers don't make it as dry as the breadcrumbs.

Anyway, I have used Ezekial Bread whizzed up in my Magic Bullet to make my own soft breadcrumbs for meatloaf. Real bread makes the best meatloaf, and the Ezekial Bread is low carb and whold grain, so it is a good addition, not a negative one. Plus you can freeze the leftover crumbs to use another day.
