Don't have a recipe, but do have a question about low carb

All of ya'll have great ideas for low carb recipes and thats great and all but my ol' man is having a fit! Everything I'm cooking is centered around meat because that's how WLS patients are supposed to eat. But his issue is that, "we have a family to feed and can't afford to fix 2 separate meals all the time. How are we gonna feed you and us and ALL of us try to get into the habit of eating better, on a limited budget? So what are some low carb foods that can be fixed to go with the meat, since most of everything is so high in carbs??"
Sry, typing for him, thx for any ideas..... :)

I rarely make a separate meal.  Just cook the meat with vegetables, salad and potatos or rice or pasta.  You eat the protein and some of the veggie, they eat what they want of that same meal.  Everyone eats healthy.

For a limited budget, a crockpot is a fantastic way to make wonderful meals out of cheaper meat cuts.

You can make just about any low carb recipe then just make a bowl of macaroni, pasta or rice for the rest of the family to put the protein rich food on top of on their own plate of course. And they can have left overs just in separate containers. We just don't serve ourselves any of the carbs, just stick to the protein rich main dish and veggies.

Low carb sides....  lots of them....  the very best of them being the ultimate weightloss veggie...

"greenbeans"  yep....super low carbs, super low calories, super low fat...even with a little bacon...

"brussel sprouts" not the lowest of low carbs...but so good for you that it makes up for it!

"Sauteed mushrooms"....  goes great with nearly every meat...

"Cucumbers" diced served with toasted sesame seeds & marinated in ricewine vinegar ( I eat this nearly every meal...love them, great flavor and good for you (except sodium...lol)

"Broccoli" cover this in cheese and even kids eat it...

Salad with ranch and bacon....yep  who doesn't like bacon?

Buffalo wings (naked, not breaded)...yep LOW carb...but high fat...  feed the guy in your life with "man food"

Cole slaw can be made low carb....

Black beans are moderate in carbs and the fiber makes them a lower carb veggie that you can spice up that's super healthy.

Soups...all kinds of low carb soups out there...

Chilli relleno.....so good for man food options...cheese and mild chiles?  tasty

Cheeseburger casserole (for the side item)..good for everyone and always a winner

This list goes on and on....and then there's all of these awesome low carb desserts that don't taste "low carb"..so don't tell him that you're cooking low carb...change how he feels about your cooking...and hey, if that doesn't work, then you shouldn't make 2 different meals...you shuld cook your own and order a pizza or have him go pick up whatever his whim desires so he won't make you feel bad about it.

Guys, (including me), are little kids.... we like to be catered to....we dn't want to know about how hard it is to make...we just like to eat it and think that we're getting spoiled...but just think...A LOT of men still get handed a microwave dinner and think that is good food....you have the chance to retrain him into thinking that noone can top your cooking...  so spoil him i you love him....and if you don't, then send him to the colonel's house of fried chicken....he won't last long...hehe...

Ok T what is your cheeseburger casserole recipe?

Sometimes you just put one foot in front of the other, even if you don't know where you're going.

Heidi,

it was buried with a lot of my other recipes in the forum...hehe

here ya go...

HEAVENLY CHEESEBURGER PIE
1.5 pounds ground beef
1/4 cup onion, chopped, 2.0 ounces
8 ounces cheddar cheese, shredded
2/3 cup heavy cream
5 eggs
A dash of cayenne
A dash of black pepper

Brown the meat and onion, seasoning with salt, pepper and whatever spices you choose; drain the grease. Beat the eggs with the cream and cayenne & pepper in a large bowl. Add the meat and cheese and mix well. Pour into a greased 9 1/2-10" pie plate. Bake at 400º 25-30 minutes until browned and it appears set. Let stand 10 minutes before cutting ....don't be afraid of adding a splash of hot sauce if the person enjoys some "kick" in their meal!

Makes 8 servings ; 3.2 grams net carbs per serving

So good and the whole family can enjoy this without them knowing how low carb it really is.

Heya Heidi,

don't tell him it's low carb and see if he's still happy... before long, he wil be adapted to how you will need to eat and the transition won't be bad on either of you!

He actually likes low carb. We have been doing low carb for years because I am diabetic but with PCOS I can't lose the weight. However, I won't tell him its low carb until he's done eating it. LOL.
