LOW Carb: No Bake cookie recipe (made on the fly) for Sharen L.
Ok for some of you, iIve been taking requests and helping recipes on the side. iIve been turning out like 10 per day to help our "little tummy" army of recipe hunters... So I want to give out more when possible and Sharen L, requested a "no bake" cookie...and I gave her some hints from friends of mine and started to put together some ideas in a bowl and this is what I came up with...
It tastes so good.... has no name (I'm gonna name it for you people)... and yes...I licked my fingers... this took me about 5 minutes to whip-up...and took forever to set-up but it did.... adjust the splenda if you think it needs more...mine turned out just about right... and hey...don't be afraid to puree some rasberries and turn the lights low with your mate.....or you can just be greedy and hide it from them....LMAO!

Chocolate-hazelnut indulgence....
Ingredients:
1 tablespoon peanut butter
2 tablespoons oats
1/2 cup unsweetened coconut
1/4 teaspoon vanilla
1 tablespoon butter
3 tablespoons heavy cream
2 teaspoons cocoa
½ tsp hazelnut spread (low carb from netrition.com)
2/3 cup Splenda
Preparation:
Bring the butter, Splenda, cream and cocoa to a boil in a very small pot.
Boil one minute, stirring constantly.
Stir in the peanut butter until well blended, then stir in the remaining ingredients.
Drop onto wax paper.
Mixture will be crumbly, so you may need to shape them with your fingers. (lick fingers clean- yummy.)
Chill or freeze until firm.
Servings:
12 small sized cookies. Can be frozen. (big ones are too rich!)
2 grams of carbs per cookie (mainly from oats & Splenda)

You CAN order those from Netrition! Look for the most unrefined oats you can have... I think they have a variety of them including "Irish rolled oats" and a few others... you can also add a spoon of flax-seed mill from RedMill (or somename like that) also from Netrition.com....it takes on the taste of things you mix with it....AWESOME fiber and might need a tiny amount more of splenda to sweeten it...
