looking for a really good no bake cookie recipe

 I have tried a few recipes and it just tastes funny.... Help Please!

I have 2 that I would like for you to try....  These aren't mine and I'm not sure where my buddy got the recipes but he's tried one and liked it very much and the other he hasn't been brave enouh to do yet...

It's so hard finding something that works for us people with the little tummies now....  I think the main problem with "no bake" diet-type of cookies is that nothing acts like a true binder...like egg or real sugar or a thickening agent that can bind the recipe....  peanut butter is good, but so is hazelnut cream that is sweetened with splenda....

Give these a whirl and let's see if you can come up with anything that works....

I have a recipe in my mind though...that deals with hazelnut cream, coconut shavings, some almond flour...a pinch of salt. and a few other things that just need to be tried....  I'll work on it!

Peanut Butter Oatmeal Drops

Makes about 36

1/2 cup butter
1 1/4 cups Splenda- brown sugar formula, firmly packed
1/2 cup milk (or evaporated milk)
pinch of salt
1/2 cup peanut butter
1 teaspoon vanilla extract
3 cups quick-cooking rolled oats

Line two baking sheets with waxed paper. In a large heavy saucepan combine the butter, brown sugar, milk, and salt. Bring mixture to boil over medium heat, stirring occasionally, until mixture comes to a full rolling boil. Without stirring, let mixture boil for exactly 3 minutes. Immediately remove from heat. Stir in peanut butter and vanilla, stirring until peanut butter has melted. Quickly stir in the oats, mix well. Working fast, drop mixture by tablespoonfuls onto prepared baking sheets. Allow to cool and become firm, about 30 minutes. Makes 3-4 dozen cookies.

Frank's No bake cookies

Makes about 16

1/2 cup milk
3/4 cups Splenda
1/2 cup butter
3 tablespoons cocoa
1/2 cup peanut butter
3 cups rolled oats
1 cup chopped nuts
1/2 teaspoon vanilla
1/2 teaspoon salt

Mix sugar, butter, cocoa, and milk in a large saucepan. Boil for about 5 minutes, stirring constantly. Remove from heat and add peanut butter. Stir until blended. Add rolled oats, nuts, vanilla, and salt. Put into 8"x8" square pan and chill. Cut into squares.

Sugar Free No Bake Cookies Recipe

6 tb - Nestle Sugar Free Quik
1 ts - Vanilla extract
1/2 c - Margarine
1/2 c - Milk (use 1%)
1 c - Flaked coconut
3 c - Quick oatmeal

NOTE On margarine you can use `I Can't believe it's not butter'

In food prosessor or mixer bowl add Sugar Free Quik, vanilla, margarine and milk and blend until smooth. Add coconut and oatmeal and blend until mixed together well.

On a cookie sheet place a piece of wax paper and take spoonful of the mixture and roll into a ball place close together. Ready to eat in 1 hour. Keep in the refrigerator

No-Bake Peanut Butter Balls w/Rice Krispies Cereal

Ingredients:

1/2 cup peanut butter (Use reduced fat for less calories.)

1/4 cup honey

1/2 teaspoon vanilla

2-3 cups of crispy rice cereal

Combine the peanut butter, honey, and vanilla. Stir in enough cereal to make balls. (Hint: Moisten your hands before rolling the mixture into balls.) Place the balls on waxed paper (or on cereal liner bags) and chill.

Easy 5-in-1 No Bake Cookies


These no-bake cookie are so tasty and nutritious. The basic recipe makes several different yummy cookies. Add your favorite ingredients to make your own unique cookie. The orange juice concentrate gives the cookies an orange flavor.


Begin with the following ingredients:

1/2 cup peanut butter
1/2 cup honey or corn syrup
1/4 cup orange juice concentrate
1 1/2 cup nonfat dry milk solids

Mix thoroughly. Now choose one of the following 5 steps:

1. OR's

2 c. rolled oats
1 1/2 c. raisins
Mix. Shape into balls then flatten. Makes 3 dozen medium cookies.

2. Crispy Balls

4 cups crispy cereal Mix. Shape into small balls. Makes 4 dozen small balls.

3. Raisin Clusters

1/4 c. cocoa
4 c. raisins Mix. Cluster into small balls. Makes about 4 dozen small clusters.

4. Coc O Balls

1/4 cup cocoa
2 c rolled oats
1/4 cup chopped peanuts
1 tsp. vanilla Mix. Shape into balls. Makes 2.12 dozen cookie balls.

5. Grahamys

Add 1/4 cup raisins. Spread between graham crackers. Makes about 3 dozen.
