LOW Carb: Lemongrass Shrimp.....no need to miss good Chinese food...only this...

Lemongrass Shrimp
Sauce:
1 cup fresh lime juice (about 9 medium limes)
1/2 cup shredded carrot
1/4 cup Splenda or about 15 packets
1/4 cup low sodium Kikkoman (the regular one will be too salty)
2 garlic cloves, minced
2 red Thai chiles, seeded and minced (you can make these with jalepenos too but not as flavorful)
½ Cup fresh basil leaves
Tiny amount of minced ginger (about the size of a pencil eraser)
Shrimp:
2 tablespoons finely chopped peeled fresh lemongrass
1 tablespoon vegetable oil or extra virgin olive oil
2 garlic cloves, minced
25 large shrimp, peeled and deveined (about 1 1/2 pounds)
Other:
1/4 cup fresh bean sprouts
¼ cup finely shredded carrots
Preparation:
(save some of the sauce on the side) it’s important later!
Mix all of the sauce together, then add shrimp mixture and let set for no less than 2 hours to marinade. Move the shrimp to the grill and don’t overcook the shrimp….they are done when they turn whitish pink! It doesn’t take long to cook over direct heat! Make sure you don’t walk off and leave this…. Baste the shrimp with the marinade (not the amount I asked you to hold on the side).
Once cooked, gather all of the shrimp together make sure you already have the side dish ready, and plate it up and then take some of the sauce( from the side, not the marinade) and cover generously. Add the bean sprouts and carrots! If you like it very spicy, add a dash of cayenne!

Thanks so much for the wonderful recpies. I am a carb watcher and I can't seem to think of these things on my own. They seem so simple when I read them from you. haha I want to try the pasta really bad. It sounds like it would be great. Bill doesn't like lasagna but I wonder if he would like this one. hmmm.............gotta give it a try.
We do love seafood. I crave it almost everyday since surgery. It is amazing how your tastes change with the wls. I hated yogurt all my life and now I love it. I liked fish and now I love it!!
