Baked Cheesecake just to spoil you…

 Ingredients

5 packages of  8 oz cream cheese

4 large eggs

¾ cup Splenda

1 1/2 tsp vanilla extract

1/2 cup heavy cream

¼ tsp lemon zest

A dash of nutmeg

Directions

It also must be cooked completely or the texture will not be right.

Make sure that cream cheese and eggs are at room temperature (very important).

Preheat oven to 350°F.

Spray a spring form pan with a non-stick spray.

In a large bowl, mix eggs, cream, sweetener, and extract.

Add cream cheese in small chunks for easier beating.

Now is a good time to add the lemon zest.

Add the dash of nutmeg.

After all the lumps are gone pour into the pan and bake for 55 to 60 minutes.

Refrigerate, leave this in the fridge for no less than a full night!!!

Any type of Berry can be used for the topping.  I love blueberries personally due to the fact they have such a punch of flavor and are full of great things that are healthy for you.  I would also suggest a few sliced strawberries….  This thing is heavenly when done right.  Take your time, follow the steps and let me know how it turns out for you!

4.5 grams carbs per serving.

Do you reckon I could safely add some extra lemon to make it more lemony or will it effect the baking?

My choice would be to replce the 1/4 tsp with a 3/4 tsp of zest if you want a lemony punch....  the only warning would be to watch out for the topping that you would choose to use since too much lemon might overpower another fruit.

See ya!

thanks for the cheesecake recipe--I haven't made one in many years.  Having a recipe someone else makes helps.  Thanks again.  Helga

I will tell you that since this doesn't have that "traditional" crust that you can crush walnuts and add those to the top or you can make a crust outta walnuts but I'm not responsible for the fat or the carb content...hehe...  So delicious though!

Lorri K, I think you can eat this on mushies!

T, how many servings is the recipe?  I closely monitor my carbs, so I want to make sure I am eating the coreect portion to make that 4.5 carbs.

Thanks!
