LOW carb: Grandmother's Chicken Casserole......... By request!
Grandmother’s Chicken Casserole
This is not my g’ma’s Chicken Casserole, but I’ve made this a lot of times for some of the folks during “community” events during the cooler months near November through February. I’ve heard that other people’s Grandmothers made things similar to this (or my wonderful NON-low carb chicken and dumplings..and no I shall not tempt you….but they are heavenly…) So let me know if this is good eating for you or not… the prep doesn’t take much time, but reducing the liquids does take time..but hey…give the food some love…it’s not just the fresh ingredients that make a dish terrific..it’s how you prepare it.
This is a 2 part recipe, but SOOOO easy!!!! Make the Alfredo Sauce FIRST then, start the main dish!
Ingredients:
Alfredo Sauce (also low carb!)
4 tablespoons butter
1/2 cup heavy cream
6 tablespoons parmesan cheese
Salt and pepper to taste
Preparation for Alfredo Sauce:
Combine ingredients in saucepan, cook on LOW and stir until it looks and feels like Alfredo sauce. Please never boil this!
Ingredients:
8 oz Canadian Bacon, diced
3/4 - 1 cup grated mozarella cheese
1/2 cup grated low-fat sharp cheddar
1 cup chicken stock
½ Cup creme
8 boneless skinless chicken breasts
stock or water for cooking chicken
1/4 tsp. each sage, thyme, and onion powder (for cooking chicken)
1 1/4 pound sliced mushrooms
2 strips of crispy, not burned, bacon
Preheat oven to 375. Spray rectangular casserole dish or Dutch oven with non-stick spray. Cook chicken breasts in stock seasoned with thyme, sage and onion powder until chicken is cooked through, about 20 minutes. Let chicken cool, then cut into bite sized pieces and layer in bottom of casserole dish or Dutch oven. Saute mushrooms in a little olive oil , then layer mushrooms on top of chicken. Don’t be afraid to use butter if it’s a matter of taste for you, but this might make it too rich for some!
Put chicken stock into saucepan and boil to reduce by 1/3. Mix heavy crème with 2 T cold water, then wisk into chicken stock and cook 5 minutes, or until slightly thickened. Wisk in Alfredo Sauce, and heat, then pour sauce over the chicken mixture in casserole dish or dutch oven. Bake about 25 minutes. Add bacon and Canadian bacon over the chicken. Uncover, sprinkle with cheese and BROIL for 5 minutes, until cheese is melted and browned on top. You gotta watch it closely to make sure it doesn’t burn the cheese!

If you have a lot of sauce left over….cook some zucchini slices on the side and cover them with sauce and fresh cracked black pepper.

I will let you girls know that I do have one little craving and i can't understand why... I have my "daily" craving of hot sauce.....so i always dip my finger in a really great homemade habenero sauce...(no I don't make it since I can't tell what 2 of the ingredients are...lol...i'm working on it!),
But when Jilly said something bout "cold weather" food...my littel belly grumbled becasue i LOVE chicken and dumplings.... something so simple that tastes so good... but i remember exactly what it tastes like....I filed that sensation under "favorites". hehe....

There are times that I wish I could hug everyone who comes back and lets me know how the meal was! What you guys and gals don't realize is that I just want our "little tummy" people to know that you can eat healthy and fool your family into eating things that will bring their weight in line and improve life for everyone.Do i make some things that are HIGH carb? Yes...do I eat it? NO...sadness.... it all depends on if the client tells me what they're interested in... I always want to please my audience.... and since you people are like a family, then I treat you like I do my own family and give you love and options and sometimes a lecture on how bad carbs are to our families...
Ultimately, i'm a guy who loves life and wants to share it with other terrific and loving people.
As for the storms, I'm one of the lucky ones in the Caribbean that has a building that is built like a bunker. so I have no fears except for the shelters that my friends live in.....
Plus I've got a simple opinion, that if God wants me that badly, it was my time to go anyway....
I think he wants me to hangout for a while longer....hehe..
